1 medium white onion

6 roma tomatoes, quartered

4 large fresh garlic cloves

1 or 2 fresh serrano chiles, stemmed and seeds removed

1/2 cup plus 2 tablespoon extra virgin Italian olive oil, divided

3 cups shredded iceberg lettuce

6 large radishes, halved and sliced 

1/2 cup cilantro, chopped and divided 

1 roast chicken, meat coarsely shredded (4 cups)

6 (6-inch) corn tortillas

Refried Beans, heated

1 avocado, halved, pitted, and peeled

1/2 cup sour cream

1/4 cup crumbled Feta Cheese

Accompaniments: sliced Jalapeno Peppers and fresh limes, cut into wedges

Move oven rack to highest level in oven and Preheat broiler.

Prepare the roasted vegetables. Cut onion in half. Cut one half of onion into 3/4 inch strips lengthwise. With the other half, chop and dice and set aside.

One a baking sheet with 2 tablespoons of Italian olive oil, place the sliced onion strips, tomatoes, garlic and chiles. Toss together coating vegetable with the olive oil and spread on baking sheet.

Broil about vegetables until softened and slightly charred, 10 to 15 minutes.

Meanwhile, toss together lettuce, radishes, the other half of the reserved chopped onion, and half of cilantro.

Remove the roasted tomato mixture from oven, in a blender along with one or both roasted serranos (depending on your taste, 1 for spicy and both if you like extra spicy) 1 teaspoon salt, blend until smooth (use caution when blending hot foods).

Transfer tomato purée mixture to a large bowl, stir in shredded roast chicken, remaining cilantro, and salt to taste.

In large pan, over medium high heat, add remaining 1/2 cup olive oil and heat pan. Fry tortillas 1 at a time, turning once or twice and pressing with tongs until golden brown, about 30 - 40 seconds for each. Place each tortilla on paper towels to remove excess fat and transfer to plates.

If you like a softer tortilla, place tortillas on cookie sheet in between layers of damp paper towels and bake for about 10 - 15 minutes in a 250F oven or until warm.

Spread tortillas thickly with heated refried beans, then top with roast chicken mixture.

Slice avocado over tostadas and dollop with sour cream.

Mound lettuce mixture on top and sprinkle with Feta Cheese.

Makes 6 servings
Mexican Fried Potatoes
4-6 baking potatoes

1/4 cup extra virgin Italian Olive Oil

1/2 onion, minced

4 cloves fresh garlic, minced

1 teaspoon dried oregano

1/2 teaspoon ground cumin

1 teaspoon chili powder

1/4 teaspoon ground chipotle chile pepper


Peel and wash potatoes. Cut each potato in half lengthwise, cut each half again leghthwise. Cut quarters into cubes. Place on paper towels and pat dry.

In medium sized mixing bowl, add onion, garlic, oregano, cumin, chili powder and chipotle chile pepper. Stir until mixed well.

On baking sheet lined with parchment paper, pour olive oil and potatoes mixing well to coat. Sprinkle with mixed seasoning spices and bake at 400 F for about 30 - 40 minutes or until golden brown and tender. Remove from oven and sprinkle lightly with salt.

Serve hot. Makes 4 - 6 servings.
