2 pounds top sirloin grilled steak, cut into thin strips

salt and fresh pepper to taste

1/4 cup extra virgin italian olive oil

18 (6 inch) tortillas

1 medium white onion, diced

4 fresh jalapeno peppers, seeded and chopped

4 cloves fresh garlic, minced

4 limes, cut into wedges

1 bunch fresh cilantro, chopped

lettuce, shredded

Cheddar Cheese, shredded

diced fresh Roma Tomatoes

Black Olives, sliced

Salsa, Guacamole and Sour Cream

Heat a large grill skillet over medium-high heat, brush with italian olive oil. Grill the steak strips, stirring constantly, until browned on the outside and cooked through, not too firm, about 5 minutes. Season with salt and pepper. Remove to a plate and keep warm

For outdoor grilling, don't cut the steaks into strips and grill the sirloin steak right on the barbeque grill for about 5 minutes on each side. Remove from barbeque grill and set aside on a plate.

In a large pan, pour 1 tablespoon of italian olive oil and saute onions, jalapeno peppers and fresh garlic until onions are tender and slightly caramelized, remove from heat and place in a bowl, this takes about 5 minutes, not long at all.

In the bottom of a deep gill pan, pour in italian olive oil, quickly fry each tortilla on both sides, until lightly browned and flexible. Set aside, and keep warm. About 30 seconds on each side. Place on paper towel to drain.

Place tortillas on a plate, and top with steak strips, onion, jalapeno, and cilantro to taste. Squeeze lime juice over, wrap and enjoy these great favorites in good eats.

In bowls or small cups, put out your fresh Salsa Recipe, Guacamole, shredded lettuce, shredded Cheddar Cheese, diced Roma Tomatoes and sliced Black Olives for garnishes.

Makes 9 servings.
