4-6 large ripe Roma tomatoes
1 large red onion, chopped
2 medium white onions, chopped or 1 large
2 fresh limes
1 Pork Loin Carnitas
2-3 Jalapeno pepper, chopped with seeds and stems removed
5 sprigs of Cilantro, chopped
2 fresh garlic cloves, minced
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground peppercorns
1 package of taco seasoning
Wash and cube roma tomatoes and place in large bowl.
Chop and peel red onion and white onions into bite sized pieces and add to roma tomatoes, mixing gently.
Roll limes on counter, cut in half and squeeze juice into bowl using your other hand to catch seeds. Remove any seeds of lime that have escaped. Add lime juice to tomato mixture.
Add chopped cilantro, fresh garlic, kosher salt, fresh ground pepper corns and taco seasoning to tomatoes and onions. Mixing until well combined.
Mix together in large glass mixing bow, the tomato mixture and Carnitas, stirring until well combined.
Serve in pre made taco shells lined with chopped lettuce. Top with spoonfuls of Guacamole, Salsa and Sour Cream.
Try this variation of this fabulous recipe:
In a 13 x 9 inch glass dish, start with a bottom layer of Carnitas. On top of Carnitas, layer some tomato mixture and then Guacamole. Repeat layers ending with tomato mixture on top.
Sprinkle with grated Cotija Cheese if available. Parmesan Cheese or Romano Cheese will do if you can't find the Cotija. (Cotija, is an authentic Mexican Cheese and is the "Parmesan of Mexican Food")
