20 large fresh mushrooms

4 tablespoons extra virgin Italian olive oil

1/4 pound baked ham, diced or black forest ham, diced

1/4 white onion, diced

1/4 cup fine Italian bread crumbs

1/4 cup fresh Gruyere cheese, grated

1/4 cup fresh grated Parmesan Cheese or Romano cheese

1/4 teaspoon kosher salt

1/4 teaspoon paprika spice

1/4 teaspoon fresh ground pepper corns

2 cloves fresh garlic, minced

Wipe and clean mushrooms. Remove stems leaving caps of mushrooms whole. Brush caps with Italian olive oil and place on lined greased baking sheet.

Chop and dice mushrooms stems, white onion and baked ham or black forest ham.

In large pan add 2-3 tablespoons of butter. Saute onion, ham, stems and fresh garlic until golden brown.

In large bowl, add Italian bread crumbs, salt, pepper and paprika spice, stir in ham mixture.

Add the Italian cheese mixing together well. Mixture should be a good consistency to hold together.

Cooking Hints and Tips: Add more melted butter if mixture is too dry,

Stuff mushroom caps with ham mixture, sprinkle with more Parmesan Cheese, broil for 3 - 5 minutes at 400F or until lightly browned and cheese is melted.
