4 -6 medium baking potatoes - peeled and quartered
2 cups baby carrots
1 green pepper - seeded and cut into 1/2 inch strips
1 red pepper - seeded and cut into 1/2 inch strips
1 medium red onion - chopped in large chunks
1 medium white onion - chopped in large chunks
12 fresh garlic cloves - peeled and left whole
2 teaspoons Italian Seasoning
1/4 cup extra virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground peppercorns
Wash and prepare all your garden vegetables and combine together in large bowl.
Add Italian olive oil, Italian Seasoning, kosher salt and fresh ground pepper corns stirring well to coat. Add more Italian Olive Oil if necessary to evenly coat all your garden vegetables evenly.
Pour into 2 large baking dishes or cookie sheet with sides.
Roast Vegetables in preheated oven at 400 F until tender and caramelized. Approx. 1/2 hour to 40 minutes, depending on oven. Turn occasionally using a slitted spoon to stir gently.
Remove from oven and spoon into large serving bowl.
Top with Kalamata Olives and lightly sprinkle with a favorite Italian Cheese choice, like the Parmesan Cheese, Romano Cheese or Asiago Cheese over top.

ON THE BARBEQUE GRILL
Follow the above directions and instead of placing in the baking dishes, double fold a very large piece of tin foil and line a metal baking sheet or metal roasting pan.
Pour your coated garden vegetables in.
Fold over the Foil and place on the barbeque grill for about 30 - 40 minutes.
Remove from barbeque grill and serve up these tender delicious roasted vegetables!
