Never made Rice Pudding before? A really great choice in Easy Desserts, to make. A yummy favorite to try, the kids will gobble this in no time! I got this Rice Pudding Recipe from my mom who got it from her mom, in "tweaking" it a bit, I ended up with this Rice Pudding Recipe. An extra creamy favorite with coconut cream. When my daughter used to have sleep overs, I used to make this for the girls for one of their "midnight snacks", they picked out their favorite fruit and devoured every single bite!
I like to make this easy pick ahead of time for an afternoon snack. All I have to do is get out the bowls and spoons and scoop out some creamy delightful into those bowls, hand out the spoons and watch the eyes light up when everyone digs in. For something extra special to add, how about one of the Drink Recipes? A Hot Chocolate special delight would be a good choice..
1 1/4 cups uncooked basmati rice
4 cups whole milk
4 cups coconut cream
1 cup white sugar
2 tablespoon butter
1/4 teaspoon table salt
1 teaspoon pure vanilla extract
1 whole vanilla bean
3 large eggs
1/2 cup whipping cream
4 cup coconut cream
sliced Mangos or Pineapple or Oranges
In a large saucepan add 4 cups of whole milk, 3 cups of coconut milk reserving 1 cup of coconut cream for later, rice, sugar, butter, vanilla, vanilla bean and salt, bringing to a boil over medium high heat so rice does not stick to bottom of saucepan. Turn heat down and simmer uncovered, stirring frequently until rice is very tender, about 1 hour.
In small bowl whisk eggs lightly.
Remove pan from heat, remove vanilla bean. Take about 1 cup of rice mixture and slowly add to eggs whisking constantly so as not to curdle the egg. Add until you have a nice even consistency and egg mixture is still warm. Gradually pour back into pan of rice mixture.
Stir in whipping cream and coconut cream, stirring until well blended. Pour into glass or ceramic bowl or baking dish. Sprinkle with coconut if desired.
Chill for at least 3 hours.
Serve and top with Mangos, Pineapple or Oranges, sliced!
Another great variation is to served this fabulous Rice Pudding Recipe with Some Raspberry Sauce and fresh Raspberries.
2 cups fresh raspberries
1 cup confectioners sugar or icing sugar
3 tablespoons of juiced lemons
In food processor or blender, puree raspberries, confectioners sugar and lemon juice until smooth.
Using a sieve, strain pureed raspberries into a small glass bowl. Discard strained seeds.
Pour desired amount over Rice Pudding and top with fresh Raspberries.
Totally creamy and excellently delicious, Enjoy!
