In our family we just love Italian Food, I love making these delicious favorites. I've made these fantastic Ravioli Pasta Recipes many times over the years for friends and family and haven't had one complaint yet! A favorite tip that I love, is to make up two dishes and freeze one for a dinner in easy meals without the hassle, all I have to do is pop this favorite into the oven and serve with a Caesar Salad.
With these stuffed Ravioli, how about making them with a Homemade Pasta Sauce? Of course a store bought version will work just fine too. With Italian Cheese grated fresh along with the fresh herbs and Italian Sausage makes an ultimate flavor mix for the stuffing. Topped with the pasta sauce and Mozzarella Cheese these little bites are a real treat in Italian Food.

2-3 cups Tomato Pasta Sauce
1/2 pound lean ground beef
1/2 pound Italian sausage
2 cups Ricotta cheese
3 large eggs, beaten
1 cup Parmesan Cheese
1 teaspoon salt
1 teaspoon fresh ground peppercorns
1 tablespoon Italian seasoning
1 medium white onion, diced
1/4 cup fresh oregano, packed, chopped
1/4 cup fresh sweet basil, packed, chopped
In large bowl mix together, ground beef, italian sausage, ricotta cheese, eggs, salt, pepper, Italian seasoning, white onions, fresh oregano, fresh sweet basil and Parmesan cheese until well combined. Set aside.
4 cups all purpose flour
4 large eggs, beaten
2 tablespoon extra virgin Italian Olive Oil
1 tablespoon table salt
Place flour in a large mixing bowl making a well. Add eggs, italian olive oil and salt.
Adding ice cold water a little at a time, gently start combining flour mixture to form a dough.
Turn out onto floured surface and knead until smooth round ball.
Place dough bake into bowl and cover and let stand for 5 minutes.
Turn dough back out onto floured surface and dive into 6 sections.
With floured hands, gently shape one section at a time into a rectangle shape. With rolling pin continue rolling dough into a thin rectangle, not too thin though as the dough will break and meat mixture will seep out. Trim off edges of rectangles making the edges even, about 12 inches long and about 3 inches wide.
Place 1 teaspoon of meat mixture onto 3 of the rectangles, placing about 2 inches apart. Place other rectangles on top of the meat to cover. Mold and shape making little lumps of covered balls. With a ravioli cutter, cut out 2 inch by 2 inch squares. Seal edges. Put aside on lightly floured surface in mounds until you have finished making all the ravioli.
To cook bring to a boil in a large sauce pan, water and 1 tablespoon of table salt.
Add Ravioli and cook until tender, about 5 - 10 minutes.
Heat Tomato Pasta Sauce until hot and lightly bubbling.
Drain and place on large platter. Cover with Pasta Sauce, tossing and coving gently. Cover with more sauce if desired.
Sprinkle with fresh grated Parmesan cheese and fresh chopped parsley or fresh oregano or chopped fresh sweet basil.
Makes enough for 6 servings.
Follow directions above for Steps 1 - 11
In bottom of 2 large baking dishes, place 2 cups of Tomato Pasta Sauce.
Place cooked Ravioli on top of sauce in bottom of pan.
Sprinkle with 1 cup of Mozzarella cheese.
Repeat layers ending with Pasta Sauce.
Cover with tented tin foil and bake at 375 F for 40 - 45 minutes. Remove from oven and remove tin foil from top. Sprinkle with 2 cups of Mozzarella cheese and put back into the oven baking for about 10 minutes longer or until cheese is melted and slightly browned.
