4 pounds of Idaho or Russets

2 teaspoons table salt

1 cup milk

1 cup whipped cream

3/4 cup butter

Wash and peel spuds. Cut into quarters and place into large saucepan. Cover with cold water. Add salt, cover with lid and bring to a boil. Reduce heat to medium low for a slow boil. Cook for about 15 minutes or until tender or when knife is inserted. Remove from stove and drain. Place back into pot and using a hand blender, blend in butter, milk and cream. Whip until creamy and smooth. Add one of the following choices for an extra special quick and easy creamy pick:

Serves 8 - 12.

Combine 1 cup grated Parmesan cheese, 6 - 8 cloves of finely chopped fresh garlic and a squeeze of fresh lemon juice, and stir into 6 cups hot mashed potatoes (8 to 12 servings).

Sage Butter:
Melt 1/2 cup butter in a small saucepan. Add 2 tablespoons finely chopped fresh sage, 2 teaspoons finely chopped fresh garlic and a pinch of nutmeg. Cook for about a minute and stir into 6 cups hot mashed potatoes (8 to 12 servings).

Garlic Chives and Fresh Parsley:
Combine 1/2 cup chopped Garlic Chives, 1/2 cup chopped Fresh Parsley and 4 minced fresh garlic cloves, and stir in 6 cups hot mashed potatoes. (8 to 12 servings).

Porcini Mushrooms & Chives:
Melt 1/4 cup butter in a large skillet. Add 2 cups finely chopped Porcini Mushrooms or White Mushrooms, 1/2 cup chopped shallots, 4 minced cloves fresh garlic and a 2 tablespoon chopped fresh chives or dill weed. Cook 4 - 5 minutes on medium high heat until caramelized. stir into 6 cups hot mashed potatoes (8 to 12 servings).
