Kabobs with Prosciutto
and Grilled Chicken

Great flavors blended together in a fantastic marinade and basted on these Kabobs while they are on that barbeque grill make these one of the best in Appetizer Recipes. So easy to prepare and deliciously scrumptious too! With fresh prepared garden vegetables these mouth watering bites are well worth going that extra mile for and will go fast, one minute they are on the plate and the next they're gone!

These are not only just for Appetizer Recipes and can be served up for a light lunch for the girls or when you need something in fantastic timesavers for a quick, nutritious and light dinner. 1 cup soy sauce

1/2 cup white sugar

2 tablespoons extra virgin italian olive oil

4 cloves fresh garlic, minced

1 tablespoon fresh ginger, grated

4 skinless, boneless chicken breast halves - cut into 1 inch pieces

1 large white onion, quartered and separated into 1 inch pieces

1 green pepper, seeded and stem removed, cut into 1 inch pieces.

10 slices of prosciutto, cut in half and folded in fan shape

20 fresh garlic cloves, whole and peeled

20 medium fresh mushrooms, stems removed

20 wooden skewers

Soak wooden skewers in water.

In a mixing bowl, combine soy sauce, sugar, oil, minced fresh garlic and ginger whisking well.

Stir in chicken, onion and whole fresh garlic cloves, marinate for 30 minutes or until vegetables are prepared. In the last 5 minutes add mushrooms.

On each skewer, thread a piece of chicken, onion, green pepper, another chicken piece, a whole garlic clove, piece of folded and fanned prosciutto, mushroom (round side out)

Repeat using all 20 skewers.

Brush Prosciutto with marinade.

Using either your broiler or barbeque grill cook for about 8 - 10 minutes basting with marinade and turning constantly, continue cooking until chicken is browned nicely and is done.

Remove from heat and place on serving platter, sprinkle with fresh chopped sweet basil or fresh chopped parsley.

Serve with a favorite Dip Recipe! The Tzatziki is a favorite!
