Macadamia Nut Belgian Chocolate Ice Cream Cake Filling
1 quart Vanilla Ice Cream
1 1/3 cups macadamia nuts, toasted and chopped
6 ounces Belgian Chocolate, Dark chopped
9 ounces Belgian Chocolate,White, chopped
1 vanilla bean
Fresh Fruit Topping
1/2 pint strawberries, washed and cleaned, cut in half lengthwise
1/2 pint raspberries
1/2 pint blackberries
3 tablespoons white sugar
1/2 vanilla bean, cut in half lengthwise
Dark Belgian Chocolate Cookies
4 1/2 ounces Belgian Chocolate, Dark, finely chopped
3/4 cup plus 2 tablespoons all purpose flour
1/2 teaspoon baking powder
1/8 teaspoon table salt
7 tablespoons unsalted butter, softened
1/4 cup plus 2 tablespoons white sugar
1 large egg
1 tablespoon Amaretto liqueur
1 tablespoon pure vanilla extract
Confectioner’s sugar for dusting or icing sugar
Toast macadamia nuts, spread nuts in a single layer on baking sheet and bake at 350°F. for 12 to 15 minutes, stir nuts two or three times during baking. Cool completely before chopping.
Belgian Chocolate Macadamia Nut
Ice Cream Cake Filling
In large metal mixing bowl place softened Vanilla Ice Cream.
Cut Vanilla Bean in half and scrape out seeds, add seeds to softened Ice Cream, discarding outer part. Mix together until well combined.
Add chopped White, Dark Belgian Chocolate and toasted Macadamia Nuts.
Gently fold all together mixing until well combined.
Place in freezer to set.
Fresh Fruit Topping
in medium bowl, combine strawberries, raspberries, blackberries, sugar and vanilla bean.
Add 2 teaspoons raspberry liqueur if desired.
Cover and refrigerate for at least 1 hour before serving. Remove Vanilla Bean before dishing onto plates, you may add back to bowl if you don't use all the fruit mixture when serving.
Dark Belgian Chocolate Cookies
Position rack in center of oven. Heat oven to 350ºF. Line 2 baking sheets with parchment paper. Set aside.
Place Dark Belgian Chocolate in microwavable bowl. Microwave on HIGH for 30 to 40 seconds, stirring once after 15 seconds, or until chocolate is melted and smooth. Set aside to cool slightly.
In medium bowl, combine flour, baking powder and salt and set aside.
Beat butter and white sugar in a large bowl with an electric mixer about 2 minutes until light and fluffy.
Add egg, beating until blended and scraping down sides of bowl as necessary. Beat in melted Belgian chocolate. Add Amaretto liqueur and vanilla and mix until blended. Reduce speed to low and gradually add dry ingredients.
Spread about half of batter in a very thin layer (about 10 inch by 13 inch) onto prepared baking sheets. Bake each sheet 7 to 9 minutes, one at a time, or until edges are lightly browned.
Immediately remove from oven and cut into 16 square cookies. Transfer wafers to wire rack and cool completely.
Now to make the Cookies:
Place 1 cookie on each or 8 small dessert plates. Arrange 2 - 3 small scoops of Macadamia Nut Belgian Chocolate Ice Cream on each cookie. Top with remaining chocolate cookies. Sift confectioners’ sugar over tops if desired
Spoon with Fresh Strawberries and Raspberries Mixture around Ice Cream Sandwiches.
