Cranberry Sauce

Cranberry Sauce made two different ways. Either with Blueberries and Pecans or just the yummy traditional with orange juice. Both would be a favorite side for Roast Turkey or a delicious Port Roast. Thanksgiving or Christmas Recipes with these trio's of favorites, just seem to go hand-in-hand together on your dinner plate. in our family dinner just isn't complete without Cranberry Sauce!

I like to add Blueberries to this recipe as they give that extra little sweetness and make a fantastic change to just ordinary cooked cranberries. The pecans give a nice added crunch. The Basic Recipe is just a good to add to your Meal. Make a fantastic hot roast turkey sandwich with the Cranberry Sauce for a mouth watering lunch favorite. With one of the picks from Salad Recipes and voila, a next-day-dinner is done!

4  cups (12 ounce bag) fresh cranberries

1 cup water

1 1/2 cups sugar

1 granny smith apple, peeled, cored and chopped

2 medium oranges, juiced

1 teaspoon zest of oranges grated

2 lemons, juiced

1 teaspoon zest of lemons, grated

1/2  cup raisins or currants

1/2 cup fresh or frozen blueberries

1 teaspoon cinnamon

1  cup walnuts or pecans, chopped

Wash cranberries and pick out any that are not fresh looking.

In large saucepan bring to a boil water and sugar, stir to dissolve sugar, add berries and bring back to a a boil.

Reduce heat, simmer uncovered for 10 minutes or until fruit burst and pop.

Add apple, juice of oranges and lemons stirring until well combined.

Add zest of oranges and lemons, pecans or walnuts, cinnamon and blueberries for added sweetness, stirring well.

Remove from heat.

Cool completely at room temperature and then place in refrigerator until well chilled.

The sauce will thicken as it cools. Serve Chilled.

Makes about 2 1/4 cups.

Basic Cranberry Sauce
4 cups fresh cranberries or frozen

1 cup white sugar

1 cup orange juice

1/2 cup water

In large saucepan combine cranberries, sugar, orange juice and water.

Stir and bring to boil.

Cook on medium heat 10 -12 minutes stirring constantly until cranberries pop and sauce is thickened. Set aside and let cool.

Makes about 2 cups.
