Chocolate Souffle
5 3.1-ounce disks Mexican chocolate (Ibarra), chopped

1/2 cup butter, plus 1 tablespoon for greasing souffle dishes

8 large eggs, separated, room temperature

3 tablespoons white sugar

Grease eight one serving souffle dishes or custard cups with butter.

Sprinkle the dishes or cups lightly with white sugar and swirl around sugar to coat the inside of cups or dishes with sugar.

In double boiler using low heat, melt mexican chocolate. Stir constantly until melted and slightly grainy.

In large bowl, whisk egg yolks, gradually add hot chocolate mixture whisking until blended.

In large bowl beat egg white using mixer, until stiff and hold firm peaks.

With 1/4 of the egg white mixture, fold into egg yolk and chocolate mixture folding well. Fold in remaining egg white mixture and fold mixture until well blended.

Pour equally into prepared souffle dishes or cups.

Bake in Preheated oven at 350°F. for about 15 - 20 or until tops have risen about 1/2 inches above rims of dishes and centers appear dry and soft set.

Serve your individual Chocolate Souffle with Whipped Cream Mocha Frosting

Whipped Cream Mocha Chocolate Frosting

1/3 cup well-chilled whipping cream

2 teaspoons instant espresso powder

1 teaspoon Kahlua

1 tablespoon confectioners sugar or icing sugar

1/2 cup Chocolate Syrup

2 ounces Mexican Chocolate,, shaved

Fresh Pineapple, wedges

In a chilled small bowl beat whipping cream, instant italian espresso powder, cinnamon and confectioners sugar until it holds stiff peaks.

Pile decoratively on souffle dishes.

In glass Measuring Cup, heat Chocolate Syrup for 30 seconds on High and pour over your dessert cups, garnish with shaved mexican chocolate or Dark Belgian Chocolate and sliced pineapple. Incredible!


Whipped Cream
1 cup whipped cream

2 tablespoons granulated white sugar

1/2 teaspoon pure vanilla extract

Beat cream, sugar and vanilla in bowl until stiff peaks form, using hand-held electric mixer. Spread cream on top.
