Kahlua Whipped Cream
1/2 cup whipped cream

1 teaspoon sugar

2 teaspoons Kahlua

Whip whipping cream, sugar and Kahlua in large chilled bowl until firm peaks form. Place in refrigerator and chill until ready to use.

Chocolate Mousse
2 cups Whipped Cream

4 large egg yolks

3 tablespoons white sugar

1 teaspoon Amaretto Liqueur or pure vanilla extract

7 ounces Dark Belgian Chocolate, chopped

3 ounces Belgian Chocolate, Dark, finely chopped

Strawberries or Maraschino Cherries or Coffee Beans - Optional

Heat 3/4 cup whipping cream in a 1-quart heavy saucepan until hot.

Whisk together yolks, sugar, and a pinch of salt in a metal bowl until combined well, then add hot whipping cream in a slowly, whisking until combined.

Transfer mixture to saucepan and cook over low heat, whisking constantly, until it registers 160°F on thermometer. Pour through a fine-mesh sieve into a bowl and stir in amaretto liqueur or vanilla.

Melt the 7 ounces of milk belgian chocolate in a double boiler or a metal bowl set over a pan of simmering water, stirring frequently. Whisk whipping cream mixture into chocolate until smooth, then cool.

Beat remaining 1 1/4 cups whipping cream in a bowl with an electric mixer until it holds stiff peaks. Whisk one fourth of whipped cream into chocolate mixture to lighten, then fold in remaining whipped cream gently but thoroughly.

Gently fold in the 3 ounces of finely chopped dark belgian chocolate pieces until combined. Spoon mousse into 8 glasses or cups.

Cover with parchment paper and chill for at least 6 hours.

Let stand at room temperature about 20 minutes before serving.

Top with fresh Strawberries and a dollop of Kahlua Whipped Cream and you will have yourself one decadent Chocolate Mousse!

Cooking Tip:
Mousse can be chilled up to 1 day. For another flavor temptation, you can replace the 1 teaspoon vanilla with 2 teaspoons instant italian espresso powder, just dissolve it in the hot whipping cream, or 3 tablespoons Grand Marnier or 2 tablespoons Cognac, whisked into strained chocolate mixture. OH-LA-LA!
