Chicken Pot Pie with Creamy Hollandaise Sauce

Out of all our favorites in Comfort Foods this Chicken Pot Pie has got to be one of the favorites in our house. The Chicken, vegetables and Creamy Hollandaise Sauce all mixed together and piled into a pie crust makes me feel like I went back in time to Grandmas Kitchen.

I can honestly say this Chicken Pot Pie is one of the Main Dish Recipes your family will rave about. I like to serve this great pick in Homecooking with a fabulous fresh tossed pick in Salad Recipes. A little cooking tip would be to use frozen pre-made pastry shells instead of making the Pie Crust Recipe, I know it's cheating but sometimes you feel like something in Comfort Foods without the hastle. I must say though, try this Chicken Pot Pie with Hollandaise Sauce by making the flaky pastry crust from scratch when you have time, you won't be disappointed in this fabulous favorite. I got this pie crust recipe from my Nana and believe you me she was the best darn cook!

Chicken Pot Pie
Flaky Pie Crust Recipe or 2 frozen pastry shells

2 cups cooked chicken breasts, cubed

2 cups mixed frozen garden vegetables

4 cups sliced fresh mushrooms or 1 can sliced - drained

1 small white onion - chopped or diced

2 cloves fresh garlic, chopped

salt and pepper to taste

1 large egg, beaten for egg wash

Hollandaise Sauce
1 cup butter, cubed into pieces

4 large egg yolks

1 1/2 teaspoons water

1/4 teaspoon sugar

2 teaspoons juice of fresh lemons

1/2 teaspoon kosher salt

1/4 teaspoon fresh ground peppercorns

Make Hollandaise Sauce using a large sauce pan, fill about 1/4 of the way with water and bring to simmering over medium heat, reduce heat.

In a medium sized mixing bowl, add egg yolks and 1 teaspoon water and whisk about 1 - 2 minutes until egg mixture turns light, add sugar and whisk again.

Place egg mixture in bowl over the simmering water, whisk constantly for 3 - 5 minutes or until your egg mixture coats back of a spoon.

Remove bowl from heat, gradually add butter a bit at a time, I like to cut my butter up in small chunks and add one chunk at a time. Whisk butter with each addition and mix until well blended together with egg mixture.

Place bowl back over your simmering water occasionally so that it will be warm to melt butter.

Add salt, lemon juice and pepper. Set aside Hollandaise Sauce.

In a large skillet, melt 2 tablespoons butter, add fresh mushrooms and cook on medium high heat until golden brown and liquid has evaporated.

In large mixing bowl, add cubed cooked chicken breasts, frozen garden vegetables, salt, pepper to taste, stirring well.

Add mushrooms, onion and fresh garlic. Pour Hollandaise Sauce into mixing bowl with all your ingredients combining mixture well.

Pour into bottom of one shell.

Cover with top shell and cut slits in top to let steam escape.

With your large egg that you have beaten, brush top pie shell with egg wash.

Bake at 350 F for 30 minutes or until top is golden brown.

Makes 4-6 Servings. Enjoy
