Chicken Parmesan With Fettucini

The breading for this Chicken Parmesan is made with italian bread crumbs and seasoned with fresh garlic and Italian Seasoning. With fresh Mozzarella Cheese smothered over the top it melts wonderfully into the tomato pasta sauce for one heck of a delicious dish to serve.

6 boneless chicken breasts

1 cup Italian bread crumbs

1/2 cup Parmesan cheese or asiago cheese

1 clove fresh garlic, minced

1 teaspoon table salt or kosher salt

2 teaspoons Italian seasoning

1/2 teaspoon fresh ground pepper corns

4 tablespoons Italian olive oil

2 large eggs, beaten

3 cups Spaghetti Sauce or 1 jar of pre-made

1 cup mozzarella cheese, shredded

1/2 cup Parmesan cheese, shredded
In pie plate or small shallow dish, beat eggs until frothy and set aside.

Using another pie plate or small shallow dish, mix together Italian bread crumbs, Parmesan cheese, salt, Italian seasoning and pepper. Set aside.

Wash and pat dry chicken breasts and place on clean platter.

Place chicken breasts one at a time in between a layer of wax paper of inside a zip lock bag. Using smooth side of a meat mallet, gently pound out each piece to flatten. Repeat with each piece of chicken and set aside on clean platter.

Heat olive oil in non stick pan over medium high heat.

Dip flattened chicken breasts into beaten eggs then into italian bread crumb mixture. Fry until golden brown on each side.

Arrange chicken breasts in large baking dish. Pour tomato pasta sauce over each piece of meat and sprinkle with additional Parmesan cheese and shredded mozzarella cheese. Cover loosely with tin foil.

Place in oven and bake at 375 F for 15 minutes.

Remove from oven and take off the tin foil and place back in oven for about 10 - 15 minutes or until cheese is melted and golden brown.

Makes 4-6 servings.

Serve with Alfredo Sauce and Fettucini, Enjoy!
