8 boneless chicken breasts
8 slices black forest ham
8 slices Swiss Cheese or gruyere cheese
1/2 cup real mayonnaise
1/4 cup parmesan cheese or asiago cheese
1/4 cup Italian Bread Crumbs
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground peppercorns
2 cloves fresh garlic, minced
1/4 teaspoon dried dill weed
1/4 teaspoon dried oregano
1/4 teaspoon onion powder
Place chicken breasts one at a time in between folded plastic wrap or inside medium zip lock bag.
Gently flatten with meat mallet until about 1/2 thick, repeat with each piece.
Wash chicken breasts and pat dray with paper towels.
Place 1 slice each of black forest ham and swiss cheese on chicken, roll and fasten with meat skewers or wooden toothpicks.
Mix together in small bowl or flat pie plate or dish, parmesan cheese, italian bread crumbs, salt, pepper, fresh garlic, dried dill weed, dried oregano and onion powder.
Rub each rolled bundle with mayonnaise to coat and then roll meat in dry ingredients to coat each piece.
Place in greased baking dish and dot each piece with butter.
With remaining dry ingredients sprinkle over tops of chicken breats.
Bake at 375 F for 40 - 45 minutes.
Makes 8 servings.
