Mexican Caramel Flan Topped with
Bananas and Coconut Whipped Cream

1 cup white sugar
1/4 cup water
3 1/2 cups whole milk, divided
1 (14-ounce) can sweetened condensed milk
3 large eggs
1/4 cup sweetened flaked coconut
3 tablespoons coconut rum
To Make Caramel - in small saucepan add sugar and water and bring to a boil over medium heat, stirring until sugar has dissolved, with a pastry brush dipped in cold water, wipe down sides of pan if any sugar crystals appear. Boil without stirring, swirl saucepan occasionally so caramel colors evenly, swirl until it turns a dark amber color. Immediately pour into 12 ramekins and swirl to coat bottom of each ramekin and set each dish in large roasting pan or large baking dish.
To Make Flan - Preheat oven to 350°F and place rack in middle.In blender, blend 2 cups milk , condensed milk, eggs, flaked coconut, coconut rum and blend until smooth, about 1 minute. Pour into medium sized mixing bowl and stir in remaining 1 1/2 cups milk, mixing until conbined. Pour evenly into ramekins which have the Caramel in bottoms.
Fill Roasting Pan or large baking dish with water only filling until water reaches just below the half way mark on the ramekins. Bake flan in the water bath until just set but still wobbly in center about 1 - 1 1/4 hours.
Remove individual dessert dishes from water bath and cool slightly on a rack, for at least 15 minutes, flan will continue to set as it cools.
Just before serving, run a thin knife around each flan, then invert onto serving plates. Make Whipped Cream with Bananas and Coconut.
Whipped Cream with Bananas
1 pint Whipping Cream
1 cup confectioners sugar or powdered sugar
1 teaspoon banana liqueur
1 teaspoon coconut rum
2 - 3 Bananas
Shredded or Flaked Coconut
In a large chilled bowl with chilled beaters, pour in whipping cream and beat until soft peaks form. Add banana liqueur and coconut rum, beat in icing sugar adding gradually while beating. Whip until firm peaks form.
Peel Bananas and slice into Whipped Cream, stir gently to mix. To serve, add dollops of Bananas and Whipped Cream beside and on top of your individual serving dishes with the Caramel Flan. Sprinkle with Coconut and drizzle lightly with Caramel Sauce.
Makes 12 servings. Delicious!
