Caesar Salad A Classic With Creamy Caesar Salad Dressing

When I'm hosting a dinner party or just feeding the family, this excellent Classic is one pick in Salad Recipes that's a great choice in side dish recipes. The Homemade Caesar Salad Dressing is so easy to make and goes great with an easy Garlic Bread Recipe either baked in the oven or done on the barbeque grill with a choice in BBQ Recipes.

I would say that it's a given that you try out this Caesar Salad. A little tip when I have leftovers in Chicken, is to add it to the original Recipe, add a Garlic Bread Recipe and Voila, you have a great pick in a light meal!

This is so easy to make, with freshly grated Parmesan Cheese and Crumbled Cooked Bacon, which I think gives an extra kick to this already popular favorite. Served with a choice in Main Dish Recipes your menu line-up will be a hit!

1 fresh head of Romaine Lettuce - Washed and torn into bite size pieces.

1/4 cup freshly grated Parmesan Cheese

6 cooked bacon slices, crumbled

Salad Dressing
1/2 cup Mayonnaise

1/4 cup milk

1/4 cup Parmesan Cheese

2 tablespoons Dijon Mustard

2 tablespoons Lemon Juice or juice of fresh squeezed lemons

1 teaspoon Anchovy Paste

2 cloves fresh garlic, crushed and chopped

fresh ground peppercorns, to taste
Put all ingredients in a Jar with lid, Shaker Cup or Container with lid.

Shake Well. DONE!

This Recipe doubles well and keeps for up to a week in the Fridge!

Homemade Croutons
4-6 cups cubed Italian Bread - Your Choice - I prefer using either the Focaccia or the Ciabatta Bread

1/4 cup butter

1/2 teaspoon Italian Seasoning

Parmesan Cheese

Seasonings Spices - garlic powder, salt, pepper to Taste

In small bowl, melt butter in microwave, add seasonings spices and whisk well.

Pour over your cubed bread that is on a Baking Sheet and sprinkle lightly with a favorite grated Italian Cheese. The Parmesan Cheese works great. Try the Romano Cheese or Asiago Cheese for something different.

Bake at 300 F for about 20 - 30 minutes or until golden brown, stirring in between.


In large bowl mix Romaine, Dressing, Parmesan Cheese Crumbled Bacon and Croutons, toss well.

Add fresh ground pepper to taste and garnish with more Parmesan cheese, croutons and bacon.

Serve with the Garlic Bread Recipe and Enjoy!

Serves 6 - 8


Sweet and Spicy Chicken Caesar Salad
2 cups roasted chicken, cubed

2/3 cup chopped fresh cilantro

1/4 cup plain yogurt

1/4 cup red wine vinegar

1/4 cup freshly grated Parmesan Cheese

1/4 cup chopped green onions

2 anchovy fillets

2 cloves fresh garlic

1 jalapeno pepper, seeded, chopped

1 tablespoon juice of fresh lemons

3/4 cup extra virgin Italian olive oil

8 cups romaine lettuce, torn into bite size pieces

3 cups Homemade Croutons (see above on how to make)

1 large red pepper, diced

2 ears sweet white corn, kernels removed

1 cup oil packed sun dried tomatoes, drained, patted dry, thinly sliced

Additional freshly grated Parmesan Cheese

Chicken Caesar Dressing
In a blender or food processor blend together fresh cilantro, yogurt, vinegar, Parmesan cheese, green onions, anchovy fillets, fresh garlic, jalapeno chili and juice of fresh lemons until smooth.

Gradually add italian olive oil and blend until smooth.

Season salad dressing to taste with kosher salt and fresh ground pepper corns.

Pour into covered container and refrigerate. Keeps well in fridge and can be prepared ahead.

In a large glass bowl, combine roast chicken, romaine lettuce, homemade croutons, red pepper, sweet white corn and sun dried tomatoes.

Toss with enough of the salad dressing recipe to coat. Garnish with additional grated Parmesan Cheese.

Serves 6 - 8.
