Fantastic Mexican Burritos

Burritos, a Fantastic Choice in Mexican Recipes with Grilled Streak, Mexican Seasoning and Grilled Vegetables stuffed into fresh Tortillas and baked with four types of Shredded Cheese is a fantastic choice in Mexican Food.

These Burritos are one great pick in Mexican Recipes. Baked in the oven with fantastic seasonings spices mixed into a cheesy rich whipping cream sauce and smothered in Shredded Cheese. Serve one of the fantastic choices in the Mexican Desserts like the Coconut Caramel Flan and you will think you're in a tropical Mexican paradise for sure!

1 pound grilled steak, skirt or flank

2 large fresh garlic cloves, minced

1/2 teaspoon ground cumin

5 tablespoons extra virgin italian olive oil, divided

1 fresh lime, squeezed for juice

1 large white onion, thinly sliced

2 fresh Jalapeno Peppers, stemmed and seeded

2 red peppers, stemmed and seeded

4 fresh garlic cloves, peeled and thickly sliced

1 cup whipping cream

1/2 cup each of Fontina, Cheese, Gouda Cheese, Gruyere Cheese, grated

1 cup Cheddar Cheese, grated

1 teaspoon dried oregano, crumbled

8 (8-inch) tortillas

Prepare and grease a grill pan, I like the cast iron grill pans. Spray lightly with non stick spray or rub lightly with some extra virgin italian olive oil.

Mix together in Medium sized bowl, Grated Fontina Cheese, Gouda Cheese, Gruyere Cheese and Cheddar Cheese.

In a large baking dish, whisk together 3 teaspoons italian olive oil, lime juice, garlic and cumin. Add steaks and let sit, turn steaks over after about 5 minutes. Let stand while preparing peppers.

Clean peppers by cutting in half and remove stems seeds, slice into 1/4 inch strips. Cut whit onion into thin slices. Prepare Jalapeno peppers by slicing in half and remove stems and seeds. Place on large baking sheet with cleaned fresh garlic cloves and drizzle about 3 - 4 tablespoons of italian olive oil onto fresh vegetables. Sprinkle with salt and fresh ground pepper and toss to coat well. Place in pre heated 400 F oven and roast for about 15 - 20 minutes or until soft and caramelized.

On prepared grill pan, over high heat, remove steak from marinade and season with salt and pepper. Grill Steak until brown, about 3 minutes per side for medium rare. Remove from grill and transfer to cutting board, let rest for 5 - 10 minutes. Slice with a sharp knife cutting steak against grain.

While steak is grilling, in a large pan, heat about 2 tablespoons Italian olive oil over medium-high heat. Add roasted onions, both red peppers and Jalapeno Peppers and garlic cloves, stir until heated through. Add whipping cream, add 1 1/2 cups of cheese mixture and stir together until mixture thickens, about 1 minute, add oregano and season with salt and pepper to taste.

Spoon 1/4 cup pepper mixture onto centers of each tortilla, top with 1/4 of grilled steak and roll up. Place in baking dish. Spoon remaining pepper mixture over tortillas. Sprinkle with remaining cheese.

Bake uncovered until cheese melts, and burritos are heated through about 10 - 15 minutes at 350 F.
