I've made this fantastic choice in Greek Desserts a few times and each time it just gets better and better. I find that in making a double batch of this favorite and freeze them for later for the Holiday Season or an anytime choice in dessert recipes for friends and family. I would say that this Sweet Greek Food favorite is one pick that will satisfy any of your cravings in sweets. Very rich and decadent in a puff pastry this is a great treat in Greek Desserts. A fantastic different change from the ordinary dessert recipes.
When I make Baklava even the kids love this sweet honey filled delight in Greek Food. A little cooking tip though, is not to cut these too big as it is a very sweet nutty delight and when cut in smaller pieces it's easier to enjoy these sweet little tasty bites in Greek Desserts.
Time spent in making Baklava is well worth it and they do freeze up very nicely. Just take these little bites out of the freezer as needed, you don't even have to pre bake them, just make and freeze. Warm up covered with tin foil, following cooking techniques below, right from frozen and they will come out just as it you had made these delights hours before. One of the great little nifty baking tips is you don't freeze these with the sweet honey syrup, add that after baking these favorites.

1 pound almonds or walnuts or combination of both, finely chopped
3/4 cup white sugar
1 tablespoon ground cinnamon
1 pound puff pastry (also known as phyllo pastry, phyllo dough or filo pastry)
3 sticks (3/4 pound) butter, melted, for brushing phyllo
2 cups water
3/4 cup water sugar
1 fresh lemons, squeezed
one 2 inch strip of lemon rind
3/4 cup sweet honey
In a large mixing bowl, combine nuts, sugar and cinnamon.
Open and unwrap puff pastry and keep the sheets covered with plastic wrap so as not to let them dry out. Uncover and take out sheets as needed.
Take one sheet at a time brushing with melted butter and place the puff pastry in the bottom of a 8 x 14 inch baking dish and repeat until you have 8 sheets stacked.
Sprinkle top sheet generously with 1/4 cup of the nut mixture
Take 2 more buttered phyllo sheets and brush each sheet with melted butter and place on top of your last sprinkling of nut mixture.
Sprinkle those 2 sheets that you have just placed with 1/4 cupt of nut mixture.
Continue adding buttered phyllo sheets, sprinkling every second sheet with nut mixture until all nut mixture is used. Place remaining phyllo sheets on top buttering each sheet.
Cut baklava into small diamond shaped pieces with a sharp knife.
Place a pan of water on the lowest shelf in oven.
Place Baklava on middle shelf above the water and bake at 300 F for 1 - 1 1/2 hours or until golden making sure that the water pan is always full.
While Baklava is in the oven, prepare syrup. Combine in a medium saucepan water with all ingredients except for the sweet honey, slowly bring to a simmering boil, and cook for 15 minutes. Add honey and simmer for another 5 minutes. Remove from heat and cool. You can remove the lemon peel at this point and discard.
When Baklava is a golden brown and done, remove from oven, pour cool syrup over the hot pastry.
Let cool completely, cover with foil and let sit for at least 24 hours at room temperature before digging in, longer if you can keep away. These keep up to 2 weeks, so all is good!
Makes about 20 golden delicious little bites.
