16 asparagus spears, cut 4 to 6 inches long
3 cups ice cubes
8 thin slices prosciutto, cut in half horizontally, if slices are very large, cut into smaller slices
6 tablespoons Philadelphia Cream Cheese
3 tablespoons butter, softened room temperature
1 small bunch fresh sweet basil, chopped fine
2 tablespoons sundried tomatoes, chopped
2 fresh garlic cloves, minced
fresh ground pepper corns
In bottom of a double pan steamer, add water half way and place on top of stove burner, bring water to a boil. In the top of the steamer add spears, cover and turn down heat to simmer for about 2 - 5 minutes, just until just slightly tender.
Remove from heat, place asparagus in large bowl filled with ice and water and cool completely. Once cooled, remove spears and place on paper towels and pat dry.
In small mixing bowl, combine Philadelphia Cream Cheese, butter, sweet basil, fresh garlic, sundried tomatoes, mix until well combined. Taste, add salt and pepper to taste if needed. Note - If using the sundried tomatoes packed in italian Olive Oil, be sure to pat dry with paper towels to remove excess oil before chopping and adding to the cream cheese.
Lay one piece of prosciutto flat on a flat surface or cutting board (if you have cut your prosciutto, lay with the cut edge at the bottom.) Spread about one teaspoon of the cream cheese mixture on top of the prosciutto. Gently press one spear into the cream cheese lengthwise on the top third of the slice of prosciutto, with the tip of the spear hanging over the cheese mixture by about half an inch.
Starting with the top side where you placed the spear, fold in the top flap of the prosciutto in toward the center from top and press into the cream cheese mixture, gently start rolling and wrapping spear until spear is totally wrapped with the prosciutto.
Repeat process for all spears.
