This is got to be one of the easiest of appetizer recipes to make. I like using the food processor for this flavorful Artichoke Dip. A winner in party recipes, all you have to do is mix all the ingredients together and blend until smooth. Add the Kalamata Olives at the end and let sit in your refrigerator overnight and voila, you have one excellent delicious favorite tin party food to serve up for your friends and family!
I like to serve this Artichoke Dip up with Crostini made with fresh Italian Bread. Instead of crackers, the Italian Bread makes a great change with fresh Crostini. Serve this excellent Dip with any of your favorite crackers or crisp tri-colored Tortilla Chips, all fantastic!

Artichoke Dip 1 jar or can whole artichoke hearts, 16 ounces) rinsed well, drained, and patted dry
1/4 cup extra virgin italian olive oil
2 fresh garlic cloves, minced
1/4 cup fresh Parmesan Cheese, grated
1/4 cup fresh parsley, chopped
1/4 cup fresh sweet basil, chopped
1/4 teaspoon kosher salt
1/4 teaspoon red pepper flakes
1/2 cup kalamata olives, pitted and chopped or green olives, pitted and chopped
1 loaf Italian Bread, sliced
Using a food processor, puree cleaned artichoke hearts, italian olive oil, fresh garlic cloves, Parmesan Cheese, fresh parsley, fresh sweet basil, salt and red pepper flakes until smooth and blended well.
In a medium bowl or container with lid, transfer your artichoke mixture. Stir in pitted chopped Kalamata Olives or chopped Green Olives until well combined.
Cover bowl with plastic wrap or place lid on your container.
Place in refrigerator and chill over night or at least 4 hours. The more this sits and the flavor meld together the better. I like making this the day before, it's absolutely fantastic!
When serving, remove from refrigerator and transfer to decorate bowl. Add fresh parsley sprigs or sweet basil for garnish.
Slice up your Italian Bread and place in bowl. Place the two wonderful picks in Party Food on your table and enjoy!
Makes about 1 1/2 cups.
Crostini - Ciabatta Italian Bread 1 loaf of Italian bread, (ciabatta bread or olive bread), cut into 1/2 inch slices on diagonal
2 tablespoons extra virgin italian olive oil
1 large clove of fresh garlic, peeled and cut in half
Parmesan cheese, freshly grated
Brush cut Italian bread lightly on both sides with extra virgin Italian Olive Oil.
On large baking sheet, place prepared and sliced ciabatta bread.
Place cookie sheet on middle rack in a preheated 425 F oven. Bake for about 5 - 10 minutes, turning half way through. Or until lightly golden brown. Watch carefully as they can burn quickly, I've had mine burn on me when I haven't been paying attention!
While your Crostini are still hot, rub gently with your fresh garlic clove, sprinkle lightly with parmigiano reggiano on each if desired.
Remove tomato mixture from refrigerator, Using spoon, spread tomato mixture on top on your Crostini and place on serving dish or platter and serve warm. Enjoy!
Makes about 15 -20 appetizers, depending on how thick you slice your bread.
