Homemade Tortilla Chips
2 packages of corn or flour tortillas
1/2 cup extra virgin Italian Olive Oil
2 teaspoons kosher salt
1/2 cup Mozzarella Cheese, shredded or Gruyere Cheese
1/2 cup Romano Cheese or Asiago Cheese
In small mixing bowl mix the types of cheese together.
Cut tortillas into triangles. Brush both sides of tortillas with Italian Olive Oil and lay on non stick baking sheets, sprinkle a bit of cheese on tops.
Bake at 325 F for about 10 - 15 minutes or until golden brown and cheese has melted.
Remove from oven and sprinkle with kosher salt. Let Cool and serve up these great tasty crunchy homemade Tortilla Chips. These are Excellent!
Now for the Tzatziki
2 cups plain yogurt
2 large english cucumbers
1 tablespoon fresh garlic, minced
1 tablespoon white vinegar
2 tablespoons extra virgin Italian olive oil
salt and pepper to taste
In a cheesecloth lined strainer pour in yogurt Put in bowl, cover with cloth and put in refrigerator to drain. 4 - 5 hours or overnight.
If you prefer not to use a food processor, you can make this very easily. Peel, seed and coarsely grate cucumbers using a hand grater, place in strainer and drain well.
If you using a food processor, peel, seed and cut cucumber into quarters and place in food processor, pulse until coarsely chopped. Pour into strainer and drain well.
In medium sized bowl add strained cucumber, fresh garlic, vinegar, olive oil, salt and pepper, mix until well blended.
Add drained yogurt, stir to blend. Taste, add more salt and pepper if needed.
Makes 2 cups - Serve with Homemade Tortilla Chips or as a great side dish for your Souvlaki Kabobs or Spanakopita.
