Twice Baked Potatoes
4 large baking potatoes

8 slices Pancetta (Italian Bacon)

1 cup sour cream

1/2 cup milk

4 tablespoons butter

1/2 teaspoon table salt

1/2 teaspoon fresh ground pepper corns

1/2 cup shredded Tillamook Cheese, medium cheddar

1/2 cup shredded Parmigiano Reggiano (Parmesan Cheese)

8 green onions, chopped


Wash and pat dry potatoes, wrap each in tin foil and bake in preheated oven for 1 hour at 350 F. degrees.

While potatoes are baking, place Pancetta in large deep pan and cook over medium high heat on stove until brown and crispy.

Remove from pan and drain on paper towl. Crumble into bowl and set aside.

Remove potatoes from oven when done, remove tin foil and cool for about 10 - 15 minutes.

In small bowl combine cheeses and green onions and combine well.

Cut in half lengthwise and scoop out flesh into a large bowl and set aside skins. Add sour cream, milk, butter, salt, pepper and 1/2 of the cheese and green onion mixture.

Using a hand mixer, beat potato, cheese and onion mixture until well blended and creamy.

On a baking sheet place potato skins that you have set aside, spoon the blended potato mixture into skins.

Top each skin with remaining cheese and green onions mixture.

Sprinkle with Pancetta bits and bake for another 15 minutes or until cheese melts and mixture is heated through.

Makes 8 Servings. Excellent!
