Sweet Potatoes with Marshmallows, Pineapple and Coconut Cream

Sweet Potatoes with Marshmallows is one yummy favorite in Holiday Recipes, with Pineapple and Coconut Cream it's a winner in side dish recipes for a great add on to Your Main Dish Recipes for either the Christmas Recipes or Thanksgiving Recipes!



It's so hard to get the kids to eat what they think is good-for-you vegetables. Over the years I've experimented with this favorite in Holiday Recipes and came up with this great pick in side dish recipes. It's sort of three different recipes all rolled into one! It's one heck of a side dish for a favorite to compliment your choices in Main Dish Recipes!


Traditionally, for the Holidays, most people cook up either yams or a version of this tasty favorite. As a kid myself, I didn't like eating the dish that my mom made up but as tradition holds, I have always made sweet potatoes. With this version of mine with Marshmallows, Pineapple and Coconut Cream, it has become a favorite on our Holiday Recipes Menu! With traditional favorites like Roast Turkey with Turkey Stuffing and a Turkey Gravy Recipe and of course the Cranberry Sauce, your table of goodies would be fantastic!


Of course a Holiday Dinner wouldn't be complete without a delicious choice in one of the Dessert Recipes. A favorite is the Angel Food Cake with Strawberry Mousse topped with Fresh Strawberries for a nice light pick. Of course the Tiramisu is also right up there! 4 large sweet potatoes

2/3 cup golden brown sugar, packed

5 tablespoons butter

1 teaspoon cinnamon

1/2 teaspoon table salt

pinch of nutmeg and ground ginger


2 cups mini Marshmallows


1/4 cup pineapple, crushed and drained


1/4 cup coconut cream 


1/2 cup pecans, chopped


Preheat oven to 475 F. Wash, pat dry. peel and cut into 1 inch pieces.

Place in glass baking dish.


In a small saucepan, combine brown sugar, butter, cinnamon, salt and a pinch each of nutmeg and ginger. Heat to almost boiling stirring until sugar dissolves.

Pour brown sugar mixture over top blending well. Cover baking dish with tin foil.

Bake in oven at 375 F. for about 50 minutes. Remove tin foil and bake until tender and the syrup thickens slightly, about another 20 minutes. I like to baste occasionally.


In medium sized mixing bowl, combine marshmallows, coconut cream, pecans and pineapple.

Remove potatoes from oven.

Increase oven temperature to about 500 F.

Top with your marshmallow mixture and return baking dish to oven uncovered.

Bake for about 3 - 5 minutes until marshmallows begin to melt.

Serves 8. YUMMY! The kids just love this one!
