Spanakopita One Excellent Pick In Greek Recipes This Little Spinach Pie A Favorite For Greek Food In Mediterranean Recipes





Spanakopita, a little Spinach Pie in Puff Pastry and very popular in Greek Food. This excellent favorite in Greek Recipes filled with two types of cheese, baby spinach baked in a flaky phyllo is always a great hit and one fabulous pick for Mediterranean Recipes.



Serve these Spanakopita up with any one of the other favorites from the Mediterranean Recipes with a couple of choices from the Appetizer Recipes for when you are cooking for a crowd. These little Spinach Pie Favorites are very popular and will go over fantastically with your friends and family. Want to stick to the finger foods, how about the excellent Chicken Wings, done Buffalo Style with the Blue Cheese Dressing on the Side for dipping. 2 pounds spinach, or 3 10 oz frozen chopped thawed

1 1/2 cups white onions, finely chopped

1/2 cup scallion, chopped or green onions

1/4 cup Italian olive oil (i cheat, I know this is a greek recipe, but they go!)

1/ 1/2 cups of fresh feta cheese

1 1/2 cups of cottage cheese or ricotta cheese

5 large eggs, beaten

1/4 cup Italian breadcrumbs (another cheater, but these taste much better than plain)

1/2 cup fresh parsley, finely chopped

1/2 cup fresh dill weed, finely chopped

3 sticks (3/4 pound) butter, melted, for brushing phyllo

1 pound puff pastry (also known as phyllo, phyllo pastry, phyllo dough, filo pastry)

Cooking Tip:
You can use fresh spinach for this recipe, wash, clean and chop. Steam in covered saucepan for 2 - 3 minutes. Drain and cool, squeeze water from spinach.

Or this one is my favorite, fill and boil kettle of water, in a large strainer pour boiling water over spinach, let drain and cool, squeeze out water from spinach.

If you are using the frozen spinach thaw and squeeze out the water from spinach.

In a large pan, saute onions and scallion or green onions in Italian olive oil for 5 minutes. Add Spinach and cook on low stirring occasionally until most of the moisture has evaporated.

In a medium mixing bowl, crumble feta cheese, add cottage cheese or ricotta and stir, add eggs and stir until well blended.

Stir in Italian breadcrumbs, parsley and dill weed into the spinach onion mixture and add to cheese mixture, stirring until well blended.

Cut the Puff Pastry sheets into thirds lengthwise. Place 1 teaspoon of spinach and cheese filling on bottom of each of the thirds that you have cut and made. Fold into triangles by starting at the bottom of sheet, folding sheet left to right then right to left until you have reached the top of the sheet and have made a little tasty triangle.

When you are done making your triangles, place those little Spanakopitas on a non stick baking sheet. To make a more crispier pastry, sprinkle top layer of your little spinach pie with cold water before baking.

Bake at 375 F for 20 minutes, or until top is a golden brown.


Another great Cooking Tip:
These can be prepared ahead of time and frozen. Freeze unbaked, when you are ready to use these little parcels, preheat the oven to 350 F and bake without thawing for 35 - 40 minutes, or until golden brown.

Serve warm

Makes about 75 pieces.
