Greek Souvlaki, Tasty Kabobs
with Tzatziki

Greek Food anyone? This Fantastic Pick In Greek Recipes with cubed Chicken Breasts, Cherry Tomatoes and Green Peppers, seasoned and marinated... Serve with Tzatziki and Greek Potatoes... Delicious!

Souvlaki Kabobs a flavorful pick in Greek Recipes. Boneless Chicken Breasts and fresh garden herbs, lemons and fresh garlic in a Greek marinade makes these Kabobs a favorite in Greek Food. Serve with Tzatziki and the Greek Potatoes for a fantastic Dinner Trio.

I like to use the Cherry Tomatoes for these kabobs, when you bite into these little guys they burst with juicy flavor. The Green Peppers roast up to perfection on either a indoor or outdoor barbeque grill. Both of these veggies roasted with the cubed Chicken Breasts make the most delicious tasting Souvlaki.

My favorite Greek Food Choice to make with these fantastic little kabobs is the Greek Potatoes. With the Tzatziki on the side all these favorites make one great dinner idea. Having company for dinner? Make these Souvlaki ahead of time along with the Greek Potatoes and you will have time to visit.

4 boneless chicken breasts, cubed

1/2 cup extra virgin olive oil

4 fresh lemons, juiced or 1/4 cup lemon juice

1/4 cup red wine or balsamic vinegar

1 tablespoon italian seasoning

1/4 cup fresh oregano, finely chopped

1/4 cup fresh sweet basil, finely chopped

1 sprig of fresh rosemary, finely chopped and stem removed

6 fresh garlic cloves, crushed and minced

1 teaspoon kosher salt

1 teaspoon fresh ground peppercorns

16-20 cherry tomatoes

1 fresh green pepper

1 fresh red pepper

Place chicken breasts, in large re-sealable zip lock bag or large glass bowl.

In medium bowl whisk together italian olive oil, lemon juice, wine or balsamic vinegar, garden herbs, fresh garlic, salt and pepper. Remove and set aside just under a 1/4 cup for basting. Keep in fridge.

Pour remaining greek marinade into re-sealable bag or bowl. If you use the bag, close bag and shake until chicken is well coated. If you use the bowl, mix with a large spoon to coat chicken well and cover with plastic wrap. Place in the refrigerator overnight or at least 3 hours, turning bag occasionally or stirring occasionally if in bowl.

Remove chicken from refrigerator and discard marinade and bag, not the bowl though!

Thread chicken on long skewers alternating with cherry tomatoes and green and red peppers. Grill over medium heat on either an indoor or outdoor barbeque grill or in the oven. Brush with remaining greek marinade turning frequently. Season with salt and pepper to taste. Remove meat from barbeque grill to a warm platter and sprinkle with chopped fresh oregano or sweet basil over tops.

Garnish with lemons that have been quartered and serve hot.

Makes about 8 Souvlaki Kabobs.
