1 16- to 18-pound turkey, neck and giblets reserved for gravy
6 tablespoons (3/4 stick) butter
3 tablespoons chopped fresh rosemary
3 tablespoons chopped fresh sage
1 tablespoon fresh ground pepper corns
4 teaspoons table salt
Roast Turkey Gravy Recipe
Turkey Stuffing with Fresh Garden Herbs
Preheat oven to 350°F.
Rinse turkey inside and out removing giblets and neck from cavity and set ashide. Pat turkey dry using paper towels.
Prepare roasting pan, spray with non stick cooking spray.
Stuff Turkey, spooning stuffing loosely into neck cavity. Fold excess skin from neck cavity over stuffed neck cavity and secure with turkey skewers. Stuff main cavity loosely with more stuffing until cavity is full.
Place bird on rack in roasting pan.
Melt butter in saucepan. Mix in chopped rosemary, sage, sweet basil, oregano, onion powder, pepper and salt.
Brush herb butter over turkey.
Place small piece of tin foil over main cavity to ensure stuffing does not dry out or burn.
Tuck wing tips under turkey and tie legs together to hold their shape. Cover whole turkey loosely with tin foil.
Roast turkey 1 hour. Remove pan from oven and remove tin foil cover, baste with pan juices. Place bird back in oven.
Continue roasting turkey until thermometer inserted into thigh registers 180°F, basting every 20 minutes. Note - Cooking time is 20 minutes per pound. A 16 pound turkey should take about 4 - 4 1/2 hours to cook.
During the last 1 hour of cooking time, remove tin foil from turkey, bast and let turkey get golden brown and skin is crunchy. Another trick to tell if your turkey is done is when juices run clear from meat and a turkey leg will move easily up and down from joint. It works believe it or not!
During this last hour, prepare Roast Turkey Gravy Recipe.
When done remove from bird from oven, place on platter and let sit for about 15 minutes while finishing your gravy. Cover with Tin Foil while resting.
Remove Turkey Stuffing and place in large bowl.
Carve Turkey, place on platter and serve with Turkey Stuffing, Gravy and a favorite in side dish recipes.
