Rhubarb Crisp with Strawberries

When I'm looking for pick in Dessert Recipes for a great sweet treat to end the dinner menu with, I like to make this Rhubarb Crisp. When guests are over for a visit, I like to surprise them with this favorite in dessert recipes, in adding a choice from Chocolate Recipes to the table as well the smiles are hard not to miss. This Rhubarb Crisp with fresh Strawberries and Vanilla Ice Cream will go great with any of your choices for one fantastic pick in Easy Desserts.


When I need something to bring to my next outdoor BBQ, I make this great Rhubarb Crisp and bring it along for a delicious treat. When I bring this favorite to the table, everyone's taste buds tickle with this delicious favorite, the Strawberries and Vanilla Ice Cream seem to go hand in hand to make this a fantastic favorite in Dessert Recipes.


Filling
4 cups rhubarb, cut into 1 inch pieces

2 cups slices strawberries

3 tablespoons tapioca or flour

1 1/2 cups white sugar

Place cut strawberries and rhubarb into 8 x 11 baking dish. Add tapioca and sugar and mix well.


Cooking Tip:
The Tapioca I feel gives a better taste than the flour. You can substitute the flour for the Tapioca and it does thicken just as well.

Topping
3/4 cup pecans, chopped or walnuts, chopped

1 cup flour

1 package, instant oatmeal any flavor, my suggestion is apple cinnamon

1/2 cup brown sugar, firmly packed

1/2 teaspoon cinnamon

1/2 teaspoon pure vanilla extract

1/2 cup butter, softened

1 1/2 teaspoons orange zest (optional) zest of lemons or fresh limes works too)


In medium sized bowl, mix together flour, oatmeal, brown sugar, cinnamon, vanilla and (orange zest - if desired)

Add softened butter breaking into chunks to flour mixture.

With fork or pastry blender mix together flour mixture and butter to form a crumbly mixture.

Add pecans or walnuts to mixture and stir until well combined.

Sprinkle evenly over fruit mixture that you have already prepared.

Bake in oven at 375 F for 35 - 40 minutes or until top is golden brown.

Remove from oven at let cool.

Makes 8 servings.
