These Refried Beans are always an excellent favorite in Side Dish Recipes to add to any of your favorites for a great night of Mexican Food Fun. One of the favorites in our house would have to be the Enchiladas.
In Mexico, this favorite in side dish recipes is added to the breakfast menu with eggs. Having a special Breakfast with Family and Friends? How about adding these Refried Beans to your table?
These are a pretty versatile dish, you may want to double this Mexican Food recipe to make a bigger batch. Keeps well in the fridge too. Great for the kids as an afternoon snack, all they need are some tortillas, shredded cheese and a microwave.
2 cups pinto beans
3/4 cup extra virgin italian olive oil
1 bulb of Roasted Garlic, approximately 6 or 7 cloves
2 - 3 tsp kosher salt
1 large bay leaf
2 roma tomatoes, diced fine
4 quart pot
Sort through raw pinto beans and throw away any that are shriveled or don't look good. takes a few minutes but worth it.
Rise beans in a large strainer under cold water to wash them, add to a very large pot, I like using a dutch oven pot.
Add 8 cups of cold water and the bay leaf and bring to a boil. Stir beans and lower heat to a medium high keeping the beans boiling, continue cooking for about 2 hours, continue adding water as it boils away.
Stir occasionally. Keep the water level to at least 2 inches above the beans.
In a kettle or pan, keep some hot water for adding to the beans when needed, the beans will keep boiling and won't interrupt your cooking time!
After two hours of cooking, the beans should be a darker brown and soft, cook for another 20 to 30 minutes if they aren't, add the oil, salt, roma tomatoes, and roasted garlic which the skin has been removed.
Bring beans back to a boil, then lower heat to a simmer, cooking slowly for another additional 1 to 1 1/2 hours. Stirring occasionally to prevent sticking to the bottom of the pot. After 1 to 1 1/2 hours, the beans want to stick, remove from stove, remove bay leaf, and mash.
Makes about 3 cups. Keeps well in air tight container in refrigerator for several days. Great for side dish recipes.
