A mouth watering choice stuffed with slivers of fresh garlic, rolled in fresh garden herbs and slow cooked in the oven. 1 boneless rolled pork loin roast 3 - 4 pounds
4 cloves fresh garlic, slivered
2 sprigs of Oregano, finely chopped
1/4 cup Sweet Basil, finely chopped
1 sprig of Rosemary, finely chopped
1 teaspoon fresh ground pepper
1/4 teaspoon salt
extra virgin Italian Olive Oil
Wash and pat dry meat. Using a paring knife, cut 2 inch deep slits into meat spacing them all around the roast. With slivered fresh garlic pieces, insert into the slits you have made.
Using a shallow dish or plate, put in finely chopped oregano, sweet basil, rosemary pepper and salt. Mix together well.
Drizzle extra virgin olive oil of meat rubbing evenly over the surface. Place meat in the dish of your mixed herbs and roll meat to cover entirely.
Place meat fat side up into your roasting pan.
2 cups baby carrots
1 large white onion, peeled and cut into bite sized chunks
6-8 cloves fresh garlic, peeled
4 cups fresh mushrooms, sliced
1/4 cup fresh dill weed, finely chopped
extra virgin Italian Olive OIl
salt and pepper to taste
In large bowl, place carrots, onion, garlic and finely chopped dill weed. Add salt and pepper to taste. Drizzle with Italian Olive OIl and mix well to coat veggies. Pour into roasting pan spreading evenly around your meat.
Place in 350 F oven for 45 minutes
While meat is cooking, In large skillet, place 1 tablespoon butter and heat over medium high heat, add fresh sliced mushrooms and cook until slightly browned and there is no liquid left in pan. Remove from heat and set aside.
Remove meat from oven and add mushrooms and mix into the other veggies in roasting pan.
Return meat to oven and cook for another 15 - 20 minutes
Remove from oven, place meat on serving platter and let stand for 10 minutes before serving. Remove Roasted Vegetables from pan and place in serving bowl.
Serve with Mashed Potatoes and your favorite Gravy Recipe.
Makes 10 - 12 servings. Fabulous!
