1/4 cup butter

1 cup whipping cream, not whipped

4 cloves fresh garlic, crushed

1 1/2 cups freshly grated - Parmesan Cheeseor any of these favorites, Asiago cheese, Gruyere cheese, Romano cheese, experiment and mix and match you will be surprised with your results.

1/4 cup fresh sweet basil, chopped fine

or

1/4 cup fresh Italian parsley, chopped fine

In medium saucepan, melt butter over medium low heat.

Pour in the whipping cream (that you haven't whipped) and whisk constantly for about 3-5 minutes over medium heat or until mixture comes to a simmer.

Add fresh garlic and stir. Adding the Italian cheese of your choice about a half a cup at a time to sauce and whisk in until smooth, keep adding cheese until creamy and smooth whisking constantly.

Serve over Fettucini and be prepared for those compliments, trust me! Enjoy this very popular of pasta recipes.


Garlic Butter Sauce with Italian Cheese
This Garlic Butter Sauce goes great with any of the Pasta Types and a fantastic change from any of the pasta recipes. One excellent pick for Italian Food!


1 pound pasta type of your choice

1/4 cup butter, softened and cubed

1/2 cup fresh Asiago cheese or Parmesan cheese

2-4 cloves fresh garlic, minced

Optional Ingredients
sweet basil, fresh garlic chives, Italian parsley or green onions, chopped


In large saucepan, bring 6 quarts of water to boil.

Add 1 tablespoon of table salt and keep boiling.

Add one of the pasta types of your choice. Reduce heat to a medium high and stir pasta into boiling water.

Stir frequently so it doesn't stick.

Cook for about 10 minutes or until al dente, (a little on the firm side).

Remove from stove and drain well into large strainer. Pour onto large platter or into a large pasta bowl.

Toss and stir in butter until melted and well mixed. If using the olive oil, pour oil over cooked pasta and and toss until well mixed. Add your fresh garlic while tossing.

Sprinkle with Asiago cheese or Parmesan cheese or another choice of preferred Italian Cheese and lightly toss.

Sprinkle with sweet basil, fresh garlic chives, parsley or green onions if desired.

Pesto Recipe
This is one of the best quick and easy recipes for a Pasta Sauce. I switch this one up and instead of the usual pine nuts, I use walnuts. It's an absolutely fantastic choice in Pasta Recipes.


1 cup sweet basil, packed and coarsely chopped

1/2 cup fresh Parmesan cheese, grated

1/2 cup extra virgin Italian olive oil

1/8 teaspoon fresh ground peppercorns

2-4 cloves fresh garlic

2 tablespoons of pine nuts, sunflower seeds or walnuts

Using a blender or a food processor, add sweet basil and fresh garlic. Do a couple of quick little pulses to blend together a bit.

Add Parmesan Cheese.

Drizzle in Italian olive oil a bit at a time or pour right into top of blender or food processor as you are blending. Combine all together until well blended.

Don't forget to add your pine nuts, sunflower seeds or walnuts if you choose to use them. Drop those in at the same time as the fresh garlic. My favorite to use most of the time is walnuts and believe it or not, this tastes just totally awesome! I haven't had complaints yet!

Serve with one of the Pasta Types and Enjoy!







Seafood Sauce
This is one creamy favorite in Pasta Recipe. Serve with fresh Linguine and you will have one of the tastiest of easy meals.





1/4 cup butter

2 cups whipping cream, not whipped

6 cloves fresh garlic, crushed and minced

1 cup green onions, chopped

1 small white onion, diced

1 small red onion, diced

1/2 pound scallops, cleaned

1/2 pound shrimp, cleaned

1/2 pound fresh clams, in shell

1/2 pound fresh mussels, in shell

1/2 cup of white wine

1 1/2 cups freshly grated - Asiago cheese, or any of these favorites of Italian Cheeses:Parmesan cheese, Gruyere cheese, Romano cheese

In large sauce pan, steam clams and mussels for about 5 minutes or until opened. When done remove from heat, leaving cover on to keep hot.

While your clams and mussels are steaming, In medium pan, melt butter over medium heat.

Add onions, fresh garlic, shrimp, scallops and wine, cook until tender and wine has reduced on medium heat stirring occasionally to prevent burning and cook seafood evenly.

Pour in the whipping cream (that you haven't whipped) whisking while pouring.over medium high heat or until mixture comes to a simmer.

Reduce to medium heat adding the Italian cheese of your choice about a half a cup at a time to sauce and whisk in until smooth, keep adding cheese until creamy and smooth, whisking constantly.

On large serving platter, place your choice of cooked pasta types, Linguine would be a good choice. Pour 1/2 of hot seafood sauce over top, toss gently.

Place cooked clams and mussels on pasta. pour remaining seafood sauce over the top. Sprinkle with more fresh parsley and Italian cheese and serve. Please make sure you remove any of the unopened clams or mussels from the pot before putting on pasta, these are not to be eaten, they will make tummy's not feel good at all!

Spaghetti Bolognese
One of the most popular of the Pasta Recipes and with a mix of lean ground beef and Italian sausage, this one is a favorite for Italian Food. Try this Pasta Sauce baked with the Ziti Pasta for a great change.


4 tablespoons extra virgin Italian olive oil

1 pound of lean ground beef

1 pound Italian sausage

1 pound of fresh mushrooms, sliced

1/2 cup red white

1-2 white onions, medium, chopped or 1 large

6 cloves fresh garlic, crushed

1 teaspoon kosher salt

1 teaspoon fresh ground peppercorns

1/2 cup fresh oregano, packed and chopped

1/2 cup fresh sweet basil, packed and chopped

2 tablespoons Italian seasoning

1 large can of crushed or diced roma tomatoes (28 oz size)

1 large can of tomato sauce (16 oz size)

1 can of tomato paste (6 oz size)

1 pound of spaghetti pasta

1/2 cup fresh Parmesan cheese, grated

In a very large pot pour Italian olive oil to cover bottom, add lean ground beef and Italian sausage and brown until just almost cooked. Break up the meat while cooking to desired size. The more you stir and cut into meat while cooking the pieces will get smaller. With a large slotted spoon, remove the meat mixture from pot and place into a large bowl and set aside.

Drain grease from pot leaving some of the oil and fat from meat (enough to cover bottom of pot) add sliced mushrooms and cook these until liquid has disappeared and are half way done, I usually like to use a medium to high heat. Turning down to a medium heat and add wine, chopped onions and fresh garlic and continue cooking until onions are soft and are slightly brown and wine has reduced.

Add salt, pepper, fresh oregano, sweet basil and Italian seasoning stirring constantly so as not to burn, turn down heat if needed. Cook until mushrooms and onions are lightly caramelized.

Add diced Roma tomatoes, tomato sauce, tomato paste, stirring until combined.

Add cooked meat back to the sauce and continue stirring until all ingredients have combined well.

Cover and bring to a gentle boil. Stirring occasionally so as not to burn the bottom.

Once pasta sauce has come to a boil, turn heat down to a very low simmer, stir and cover.

Let simmer for at least 2 - 3 hours, on very low, making sure there are gentle bubbles to simmer and cook sauce. Stir occasionally.

Once done, remove from heat. Serve over spaghetti pasta or one of your favorite pasta types.

In large saucepan, bring 6 quarts of water to boil.

Add 1 tablespoon of table salt and keep boiling.

Add pasta of your choice. Reduce heat to a medium high and stir pasta into boiling water.

Stir frequently so it doesn't stick.

Cook for about 10 minutes or until al dente, (a little on the firm side).

Remove from stove and drain well into large strainer. Pour onto large platter or into a large pasta bowl.

Add Pasta Sauce slowly, one or two ladles at a time, tossing and coating pasta well, until your desired amount is reached.

Sprinkle with 1/2 cup of Parmesan cheese or Italian Cheese of your choice.

Tomato Spaghetti Sauce
A definite favorite for Pasta Recipes. Make with any of your favorite Pasta Types and your family and friends will be requesting the recipe! Of course with the ever popular Spaghetti you can't loose!
