2 cups of buttermilk

3 large eggs-beaten

1/2 cup whipping cream (unbeaten)

1 1/4 cups Fresh or Frozen Blueberries (or fruit of choice)

1 package active dry yeast

2 tablespoons warm water

2 cups flour

1 tablespoon white sugar

1 teaspoon baking soda

1/2 teaspoon table salt

In a small bowl, dissolve yeast in warm water. In a Large bowl, combine the flour, sugar, baking soda and salt. Gradually stir in buttermilk, yeast mixture and oil until smooth. In a small bowl, beat eggs and cream and stir into the batter.

Pour batter by 1/4 cupfuls onto a greased hot griddle. Sprinkle each with fruit. Turn when bubbles form on top of pancake. Cook until second side is golden brown. Serve with warm Fresh Blueberry Syrup.

Serves 6 - Excellent!


Blueberry Sauce
2 cups Fresh or Frozen Blueberries (or fruit of choice)

1 cup white sugar

1/2 cup water

1-2 fresh lemons, squeezed or 1 tablespoon Lemon Juice

In a small saucepan, combine fruit, sugar and water. Bring to a boil. Reduce heat, simmer uncovered for 15 minutes or until slightly thickened. Remove from heat. Stir in squeezed lemons or lemon juice. Keep Warm.
