Grilled Oysters Rockefeller

Oysters Rockefeller is one of the grilling recipes that has been around for ages. Get that barbeque grill out and serve up one of the tastiest in finger foods around. A fantastic choice in BBQ Recipes.


Whip up a favorite like a creamy Potato Salad Recipe or one of the Pasta Salads to go along side of a tasty grilled Steak. Invite some friends over and enjoy some laughs with these Oysters Rockefeller as a warm up in getting your outdoor party started.



2 cups finely chopped fresh baby spinach, firmly packed

4 green onions, finely chopped

1 tablespoon fresh parsley, finely chopped

2 teaspoons minced fennel

1/2 cup coarse fresh italian bread crumbs or day-old baguette

1/4 cup fresh grated Parmesan Cheese

4 tablespoons butter

5 bacon slices

10 cups kosher salt for baking and serving (approx 3 lb)

20 small oysters on half shell shell fragments removed and shells scrubbed well

In medium mixing bowl, toss together spinach, green onions, parsley, fennel, and half of the bread crumbs.

Melt butter in a medium sized skillet using medium heat.

Add spinach mixture and cook about 1 - 2 minutes stirring, until spinach is wilted.

Stir in fennel, salt and pepper to taste and transfer mixture to medium mixing bowl, cover with plastic wrap and chill for about 1 hour in refrigerator.

Cook bacon in medium skillet over medium high heat until crisp. Place on paper towel to absorb excess grease. Cool and crumble into pieces.

In large shallow baking pan, spread half of the kosher salt. On top of salt place oysters.

Remove spinach mixture from refrigerator and spoon over top of oysters.

Top oysters with crumbled bacon pieces and sprinkle remaining bread crumbs and Parmesan Cheese over tops.

Place baking pan on preheated barbeque grill. Close lid and grill for about 10 - 15 minutes or until edges of oysters begin to curl and bread crumbs are toasty golden brown.

Prepare a shallow serving platter by placing rest of kosher salt on bottom of platter.

Remove pan from grill and nestle oysters on prepared shallow serving platter. Garnish with fresh sprigs of parsley and serve warm, enjoy!

Serves 10 for 2 yummy appetizers each.
