Manicotti or Cannelloni Pasta Recipes

Manicotti is one of the largest of pasta types, usually stuffed with Ricotta, Parmesan Cheese and Spinach. The Cannelloni is smaller than the Manicotti and can be stuffed with a favorite Italian Sausage, Parmesan Cheese. Both of these choices in Pasta Recipes are baked with a favorite Pasta Sauce.


With three choices to pick from for these stuffed favorites in Italian Food are already pre made, just pre boil and stuff with filling of your choice. Hosting a Dinner Party or having friends and family over for a special occasion? Make one of these Pasta Recipes ahead of time for a relaxing visit for a great idea in timesavers. Either the Manicotti or Cannelloni pasta work for these favorite Italian Recipes.


Not as hard to make as you may think, when I choose one of these Pasta Recipes to make, I like to make extra's to freeze for quick take-out-of-the-freezer easy meals. Great for one of those rainy days or when unexpected company arrives. Add on a favorite from Salad Recipes and a tasty Garlic Bread and voila, you have one easy dinner.


Before baking the Manicotti or Cannelloni, cover with a favorite Pasta Sauce. A Homemade Tomato Sauce or a Creamy Bechamel Sauce would be fantastic with shredded Mozzarella Cheese sprinkled on top. A great little cooking tip when time isn't on your side, a favorite pasta sauce for the grocery store works just as well.

Cheese Manicotti
1 box Manicotti or Cannelloni Pasta Shells

3 cups Ricotta cheese or Cottage Cheese

4 cups Mozzarella Cheese, shredded

2 cup Fontina Cheese, grated

1 cup fresh Parmesan Cheese or Asiago Cheese, grated

4 cloves fresh garlic, minced

1-2 medium white onions, diced

1/2 cup chopped fresh oregano, packed

1/2 cup chopped fresh sweet basil, packed

2 large eggs, beaten

1 tablespoon Italian seasoning

1 teaspoon salt

1 teaspoon fresh ground peppercorns

4-6 cups of Tomato Spaghetti Sauce

Cook Pasta Shells as directed, add 1 tablespoon of extra virgin Italian olive oil or vegetable oil and 1 tablespoon of table salt to water while cooking, this prevents the shells from sticking together while cooling. Cook until al dente, drain and set aside to cool.

In a large mixing bowl, combine Ricotta Cheese or Cottage Cheese, 3 cups of mozzarella cheese, 1 cup Fontina Cheese, Parmesan Cheese or Asiago Cheese and stir together.

Add eggs, fresh garlic, onions, fresh oregano, fresh sweet basil, Italian seasoning, salt and pepper and blend all ingredients together mixing until well blended.

Using two 13 x 9 inch baking dishes, spread about 2-3 cups of spaghetti sauce onto bottom of dish.

Stuff shells with cheese mixture and place in baking dishes arranging over the spaghetti sauce.

Once pasta shells are placed, topped with another 2-3 cups of sauce over tops.

Cover with slightly tented foil and bake at 375 F for 40 - 45 minutes. Remove from oven and remove tin foil from top. Sprinkle with the remaining 1 cup of Mozzarella cheese and 1 cup of Fontina cheese, put back into the oven baking for about 10 minutes longer or until cheese is melted and slightly browned.


Stuffed Manicotti
With Italian Cheese and Italian Sausage

1 box Manicotti or Cannelloni Pasta Shells

1 pound ground Italian Sausage

1 1/2 cups Ricotta cheese or Cottage cheese

1 cup fresh Gruyere cheese, shredded

1 cup fresh Parmesan Cheese, grated

4 cloves fresh garlic, minced

1 medium white onion, diced

1/2 cup chopped fresh oregano, packed

1/2 cup chopped fresh sweet basil, packed

2 large eggs

1 tablespoon Italian seasoning

1 teaspoon salt

1 teaspoon fresh ground peppercorns

2 cups Mozzarella cheese, shredded

4-6 cups of Tomato Spaghetti Sauce

Bring to a boil in a large sauce pan, water, 1 tablespoon of extra virgin Italian olive oil or vegetable oil and 1 tablespoon of table salt. Cook until al dente, drain and set aside to cool.


Combine Italian Sausage, Ricotta cheese, Gruyere cheese, Parmesan Cheese and stir together in a large mixing bowl.

Add eggs, fresh garlic, onions, fresh oregano, fresh sweet basil, Italian seasoning, salt and pepper and blend all ingredients together mixing until well blended.

Using two 13 x 9 inch baking dishes, spread about 2-3 cups of Spaghetti Sauce onto bottom of dish.

Stuff pasta shells with meat mixture and place in baking dishes arranging over the sauce.

Once pasta shells are placed, topped with another 2-3 cups of sauce over tops.

Cover with slightly tented foil and bake at 375 F for 40 - 45 minutes. Remove from oven and sprinkle with 2 cups of shredded Mozzarella cheese, bake for about 10 minutes longer or until cheese is melted and slightly browned.


Spinach Manicotti
1 box Manicotti or Cannelloni Pasta Shells

2 cups Ricotta cheese

5 cups Mozzarella cheese, shredded

1 cup fresh Asiago Cheese, grated

4 cloves fresh garlic, minced

1 medium white onion, diced

1/2 cup chopped fresh oregano, packed

1/2 cup chopped fresh sweet basil, packed

1 package frozen chopped spinach, thawed and squeezed dry

2 large eggs, beaten

1 tablespoon Italian seasoning

1 teaspoon salt

1 teaspoon fresh ground peppercorns

4-6 cups of Tomato Spaghetti Sauce

Cook pasta shells as directed, to prevents the shells from sticking together while cooling, add 1 tablespoon table salt and tablespoon of extra virgin Italian olive oil or vegetable oil to water, cook until al dente, drain and set aside to cool.

In a large mixing bowl, combine Ricotta cheese, 3 cups of Mozzarella cheese, Asiago cheese and stir together.

Add eggs, fresh garlic, onions, spinach, fresh oregano, fresh sweet basil, Italian seasoning, salt and pepper and blend all ingredients together mixing until well blended.

Using two 13 x 9 inch baking dishes, spread about 2-3 cups of Spaghetti Sauce onto bottom of dish.

Stuff pasta shells with cheese spinach mixture and place in baking dishes arranging over top.

Once Manicotti are placed, topped with another 2-3 cups of sauce over tops.

Cover with a piece of slightly tented foil, bake at 375 F for 40 - 45 minutes.

Remove from oven, removing foil from top. Sprinkle with remaining 2 cups of Mozzarella cheese and bake for about another 10 minutes longer or until cheese is melted and slightly browned.

Freeze one dish for another rainy day to enjoy for a fantastic choice in Italian Food!
