Baked Lasagna with Italian Cheese

Lasagna, a delicious favorite in Italian Food, baked with Fresh Italian Cheese, Italian Sausage, Spinach and Mushrooms in a Tasty Tomato Sauce and Fresh Herbs, an excellent choice in Italian Recipes.



I like to make two of these mouth watering dishes. One Baked Lasagna for a tasty dinner with a great Garlic Bread Recipe and the other dish for the freezer for timesavers in easy meals for a future dinner.


A little cooking tip is if you can't find ricotta cheese in your local market, the large container of cottage cheese will do just as great. When I'm cooking for the family and the grandkids, I use the cottage cheese instead of the ricotta, they even eat up the spinach too, no picking out the veggies in this tasty choice in Italian Food.


When I make this excellent Lasagna and everyone finds out, there's usually a mad dash to the house and extra heads to count at the dinner table! For those occasions, I'm sure glad that I made the two dishes of Baked Lasagna as they sure came in handy to feed all those smiling-mouths! With a Creamy Caesar Salad and a Decadent Chocolate Cake, all those smiles will be turning into grins with this menu!

In a very large pot pour italian olive oil and add butter to melt over medium high heat.

Add sliced mushrooms and cook until liquid has disappeared and are half way browned, I usually like to use a medium to high heat.

While mushrooms are cooking, in a large skillet brown ground beef and italian sausage until cooked through. Drain and set aside.

Once Mushrooms are browned, turn heat to medium, add wine, chopped onion and fresh garlic and continue cooking until onions are soft and are slightly brown and wine has reduced.

Add salt, pepper, oregano, basil and italian seasoning stirring constantly so as not to burn, turn down heat if needed. Cook until mushrooms and onions are lightly caramelized.

Cut and quarter roma tomatoes, remove seeds if necessary into medium bowl, with food processor or hand blender and pulse until chunky and crushed.

Add crushed tomatoes, tomato sauce, tomato paste to pot, stirring until combined. Stir in cooked ground beef and Italian sausage mixture. Cover and cook on medium high heat until boiling stirring occasionally so as not to burn.

Turn heat down and let simmer for at least 1-2 hours, on low, making sure there are gentle bubbles to simmer and cook sauce.

Once done, remove from heat.

In large saucepan, bring 6 quarts of water to boil.

Add 1 tablespoon of table salt and extra virgin Italian olive oil to boiling water.

Add Lasagna Noodles. Reduce heat to a medium high and stir frequently

Cook for about 10 minutes or until al dente, (a little on the firm side).

While noodles are cooking, boil about 8 cups of water and pour boiling water over fresh spinach in strainer. Drain and squeeze dry. If using frozen chopped spinach, previously thaw and squeeze dry.

Remove Pasta Noodles from stove and drain well into large strainer.

Grease or lightly spray with non stick spray 2 large baking dishes. Line bottoms with Lasagna Noodles.

Add Sauce slowly, one or two ladles at a time, until your desired amount is reached to cover noodles.

Add one half of cheese filling, spreading evenly over top of meat sauce.

Add a layer of spinach and spread evenly over cheese filling.

Repeat with layers of noodles, meat sauce, italian cheese mixture and spinach, filling both baking dishes.

Sprinkle with Asiago Cheese, Mozzarella Cheese and Provolone Cheese. Cover loosely with tin foil and bake at 350 F for 30 - 35 minutes.

Remove from oven and remove tin foil.

Turning oven temperature up to 400 F. Place back in oven and bake for another 10 - 15 minutes or until Italian Cheeses are melted and lightly brown.

Remove from oven and let stand for about 5 - 10 minutes to set up. Serve.

Cooking Tip:
When I have remaining Spaghetti Sauce, this makes wonderful timesavers for future quick meals, or making other great italian Recipes that call for spaghetti sauce. Freeze in containers and pull out when you need a break. A quick and easy recipe!
