While the fish in marinating, hubby gets the barbeque grill smokin' hot then starts cooking up this delicious Grilled Salmon, one of his excellent little cooking hints is he bastes the fish with some of that Creamy Mustard Dill Sauce for a flavor sensation that is out of this world!

1 tablespoon white vinegar
1 fresh lemon, squeezed for juice
2 tablespoons white sugar
1 tablespoon dill weed
1 teaspoon kosher salt
1/4 teaspoon fresh ground peppercorns
4 salmon steaks or 2 large salmon fillets
Combine white vinegar, lemon, white sugar, dill weed, salt and pepper in a re-sealable plastic bag or large glass or metal mixing bowl.
If you are using the fillets, cut into 4 pieces and gently add fish to bag and seal. Turn to coat and refrigerate for 1 hour, turning occasionally. For the Salmon Steaks, add gently to bag, coat and seal.
If you are using the glass or metal bowl, place salmon fillets or salmon steaks into bowl and gently coat. Cover and seal with plastic wrap and place in refrigerator for 1 hour, turning occasionally.
Mustard Dill Sauce
1/4 cup Mayonnaise
1/4 cup Dijon mustard
1/4 cup fresh dill weed, finely chopped
4 cloves fresh garlic, minced
1-2 tablespoons white sugar
1-2 fresh lemons, squeezed for juice
1/4 teaspoon pepper corns
In small bowl, combine mayonnaise, Dijon mustard, dill weed, white sugar, juice of the lemons and fresh ground pepper corns.
Whisk until well combined, cover with plastic wrap and place in refrigerator.
Remove fish steaks from refrigerator, drain and discard marinade and bag if you are using one.
Grill 6 - 7 minutes on each side on a medium hot barbeque grill, brushing lightly with the Mustard Dill Sauce that you have set aside for basting.
Serve with your Homemade Mustard Dill Sauce that has been chilling.
Makes 4 Servings. EXCELLENT!
