Greek Potatoes Oven Roasted with Fresh Lemons

Greek Potatoes with Fresh Garlic and Lemons, a favorite for Side Dish Recipes in Greek Food. Roasted Potatoes covered with Fresh Herbs and drizzled with Olive Oil and baked slowly in the oven to mouth watering perfection.



Baby potatoes work great with this dish, no peeling just wash and cut in half, too easy and make the perfect Greek Potatoes. When using regular baking potatoes, peel and quarter and put into the baking dish. I like using fresh lemons with the fresh herbs and drizzle them with Olive Oil and let them just marinate for awhile to get the flavors mingling together for a very yummy tasty Greek Food Favorite.


Slowly baked in the oven for a choice in side dish recipes that's worth the wait for sure! I like to serve these Greek Potatoes with the Souvlaki or the Leg of Lamb. The great thing with these Roasted Potatoes is they go great with any meal choice. Either with a Pork Roast or Beef Roast. Great for when the friends and family are over for dinner, with everything in the oven cooking it leaves you time to spend chatting.

To top of your menu, a delicious choice from the Dessert Recipes would be perfect. Sit, relax and enjoy the rewards of serving up a fantastic meal with friends and family.


1/2 cup Italian olive oil

3/4 cups chicken stock

6 cloves fresh garlic, minced

4 fresh lemons, squeezed for juice or 1/2 cup fresh lemon juice

1/4 cup fresh oregano, finely chopped

1/4 cup fresh sweet basil, finely chopped

1 fresh sprig of rosemary, finely chopped and removed from stem

1 tablespoon of Greek seasoning or Italian seasoning

1 teaspoon kosher salt

1 teaspoon fresh ground peppercorns

15-20 small baby potatoes
or 6 - 8 medium baking potatoes, peeled and quartered


In a very large mixing bowl, mix Italian olive oil , minced fresh garlic, fresh juice of lemons, fresh oregano, sweet basil, rosemary, greek seasoning or italian seasoning, kosher salt and fresh ground pepper corns. Whisk well. Do the taste test and add more of any of the seasonings spices that you prefer.

Prepare and wash potatoes and add to mixing bowl, stir to coat well. Cover with plastic wrap and place in fridge for about an hour or so, stirring occasionally.

Spray lightly two large baking dishes with non stick spray. Pour potatoes and olive oil and lemon greek marinade into baking dishes, ensuring potatoes are arranged equally in bottoms of dishes. Pour chicken stock over the potatoes just enough to cover, don't worry if you need more or less of the 3/4 cups that I've said, it really depends on how big your baking dishes are.

Cover with a tin foil.

Bake at 350 F for about 1 1/2 - 2 hours in oven turning occasionally until tender but firm.

During the last 1/2 hour or 45 minutes, remove from oven, remove tin foil and gently stir potatoes. Place back in oven without tin foil to brown slightly.

Makes about 4 - 6 servings.
