Turkey Gravy Recipe
and Caramelized Onions

A rich and creamy Turkey Gravy Recipe made with delicious pan drippings from your oven roast Turkey. There is nothing like a kitchen filled with the smells of Holiday Recipes.




There's nothing like making a big "hole" in those mashed potatoes and pouring some gravy inside and over the top of that moist delicious roast turkey with a traditional favorite in side dish recipes.

turkey neck and giblets
5 1/2 cups (or more) canned low-salt chicken broth

1 large white onion, quartered

1 bay leaf

1 sprig of fresh rosemary

1 sprig of fresh sage
1/4 cup all purpose flour

1/2 cup butter

1 medium white onion, diced fine

2 tablespoons poultry seasoning

fresh ground pepper corns

kosher salt



In large saucepan, combine the turkey neck and giblets that you set aside, 5 1/2 cups broth, quartered onion, bay leaf, rosemary and sage in saucepan. Simmer until reduced to about 3 cups of liquid. There will be some "skim" on surface of liquid while simmering, skim this off occasionally. Simmer for about 1 hour. Strain turkey stock when done and discard neck, giblets, bay leaf, rosemary, sage and onion.

While stock is simmering. Pour Turkey drippings into large glass measuring cup and let stand for excess fat to rise to top. Once separated, remove about 1/4 of the fat.

Gradually add flour to the drippings in glass measuring cup and whisk until well blended.

After removing turkey and drippings, place roasting pan on stove and melt butter over medium high heat, add sliced onions and poultry seasoning, sauté until onions are golden, about 10 minutes scraping all the "goodies" from the roasting pan.

Add drippings and flour mixture back to roasting pan and bring to a boil, reduce heat and whisk constantly for about 10 minutes or until gravy has thickened. Season to taste with fresh ground pepper corns and kosher salt.

If you would like, you can strain out onions for a less "thicker" of a gravy, I like leaving them in as it gives that extra zing with the caramelized onions.
