Garlic Shrimp
3 pounds peeled jumbo shrimp, raw with tails on

4 tablespoons butter

2 tablespoons extra virgin Italian olive oil

6 cloves fresh garlic, minced

4 shallots, minced

kosher salt and fresh ground pepper corns

1 lemon, juiced

4 tablespoons fresh dill weed, chopped

In a large pan over medium high heat, melt butter with Italian olive oil. Add fresh garlic and shallots and saute for 2 minutes.

Add jumbo shrimp and cook for 3 minutes or until a nice pink color.

Do not overcook, as soon as they turn pink they are done. If over cooked they will become "rubbery". Add salt and pepper to taste.

Pour shrimp with all the juices from your pan into a large bowl, add lemon juice and dill weed. Mix well until all ingredients are well combined. Cover with plastic wrap and refrigerate for at least 4 hours.

Remove from refrigerator and drain off liquid keeping garlic, shallots and dill in with shrimp.

Arrange on platter and serve with Cocktail Sauce. Garnish with fresh lemon slices and sprinkle with fresh finely chopped dill weed.

Cocktail Sauce
1 cup ketchup

3 tablespoons white onion, grated

3 tablespoons horseradish

2 tablespoons juice of fresh lemons

1 tablespoon fresh tarragon, chopped (if you can't find tarragon, fresh sweet basil or marjoram will do)

In a medium bowl, whisk all ingredients together. Cover with plastic wrap and refrigerate for at least 1 hour before serving. This cocktail sauce keeps well up to 2 days in fridge.

Individual Servings
In shrimp cocktail glasses or elegant wine glasses, arrange crushed ice in bottom of your choice of serving dishes.

Arrange jumbo shrimp around outer edge of serving glasses. Place a dollop of Cocktail Sauce in the middle of each serving dish.

Garnish with a sprinkling of fresh chopped Dill Weed if desired. Very elegant!

Serves 12 as an appetizer serving.
