Great Main Dish Recipes are sometimes hard to find and please the whole family. With hardly no mess and fuss this pick for delicious down home country cooking will be a hit. Sometimes, Kids cooking can be so tedious in getting them to eat, I would probably guess with this duo, the kids will be saying "Lets Eat!"


With only two dishes on your counter and a baking sheet, these replace that messy deep fryer full of not-so-healthy-oil and make a better choice. Poutine? This great side dish is a little cheesy dish and sometimes known as Cheese Fries, you really have to try them out! The family loves this cheesy treat. With real cheddar cheese curds and chicken gravy over top of french fries, this easiest of side dish recipes seems to go absolutely perfect with the Fried Chicken!

2 frying chickens cut

3 large eggs, beaten

1/4 cup milk

1/2 cup flour

1/2 corn meal or fine italian bread crumbs

1 tablespoon italian seasoning

1 teaspoon dried dill weed

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon table salt

1/4 teaspoon fresh ground peppercorns

2 tablespoons extra virgin Italian olive oil

In flat pie plate, whisk together eggs, add milk whisking well.

In a second pie plate or flat baking dish or plate, mix together flour, corn meal, Italian seasoning, dill weed, garlic, onion, salt and pepper.

Wash chicken pieces well and pat dry with paper towel.

On large baking sheet, line with tin foil and coat with olive oil, making sure pan is coated, add more if needed.

Take each piece of chicken and dip in egg mixture then in flour mixture and place skin side down on baking sheet.

Repeat with all pieces of chicken until all are coated and placed on baking sheet.

Bake in preheated oven at 400 F for 40 - 45 minutes, turning chicken half way through.

If oven seems too hot, reduce heat to 375 F.

Remove Fried Chicken from oven and place in serving dish. Garnish with fresh parsley if desired.

Makes about 6 - 8 servings.

Classic Poutine
Cheese Fries with
Chicken Gravy

1 bag of french fries

1 bag of cheddar cheese curds

1 quart of chicken broth

4 tablespoons of flour

4 tablespoons of butter

Bake fries as directed on package.

While fries are cooking, in a medium size saucepan bring chicken broth to a boil.

Meanwhile in small pan, melt butter and add flour gradually until your have a thickened pale white sauce, about 2 - 3 minutes.

Whisk white sauce into chicken broth and simmer until thickened. Whisk often or you will get a lumpy gravy. If this does happen, strain out lumps and all will be fine again. Add Salt and pepper to taste. If the color seems too pale, here is a quick cooking hint, add a teaspoon of soy sauce or a cube or packet of chicken or beef bouillon for an extra zing of flavor.

Remove fries from oven when crispy and done. Toss with salt and pepper if desired.

In serving bowls or on a plate place cooked fries.

On top of each serving of fries, add 1/2 cup of the cheese curds.

With Ladle pour 1 cup of hot gravy over top of fries and cheese curds.

Let stand about 3 - 4 minutes to allow the cheese curds to melt and get nice and gooey.

Makes about 6 - 8 servings. Enjoy!
