1 1/2 pounds grilled steak, flank, trimmed if necessary or grilled Chicken if you prefer
2 tablespoons extra virgin italian olive oil
1 tablespoon ground cumin
1 tablespoon chile powder
3/4 teaspoon fresh ground pepper corns
3/4 teaspoon cayenne
1 1/2 teaspoons table salt
1 heart of romaine
2 avocados, ripe and firm
1 green pepper, seeded and sliced
1 red peppers, seeded and sliced
1 large white onion, sliced
4 cloves, fresh garlic, minced
12 (6-inch) tortillas
1-2 cups shredded Cheddar cheese
1 cup loosely packed fresh cilantro, chopped
Heat a well-seasoned ridged grill pan (preferably cast-iron) over moderately high heat until beginning to smoke, then brush with about 1 tablespoon of Italian olive oil.
While pan heats, pat steak dry and stir together seasonings spices of cumin and Chile powder, pepper and salt, rub both sides of steak.
Grill steak, turning over once, at the 5 minute mark, for medium-rare. Transfer to a cutting board and let stand 10 minutes.
One the barbeque grill, follow the same instructions, grill steak to your liking, we like to cook these steaks about 4 - 5 minutes on each side for medium rare.
While grilled steak is resting, in the same grill pan, saute your peppers, onions and garlic with salt and pepper to taste. You will have some of the seasonings left in the pan from the steak which makes this even better for taste. Saute for about 5 minutes on a medium high heat, or until the peppers and onions are soft and are slightly caramelized.
Cut romaine lettuce crosswise into thin shreds. Quarter avocados lengthwise, then pit, peel, and cut lengthwise into 1/4-inch-thick slices.
While steak is standing, stack tortillas, wrapped completely in dampened paper towels, on a microwave-safe plate and cook in a microwave oven at high power until tortillas are hot, about 1 1/2 minutes.
Thinly slice grilled steak across the grain with a sharp knife and cut on a diagonal across the grain of the steak.
Serve with the flour tortillas, avocados, romaine, cilantro.
