Eggs Benedict with Avocados,
Canadian Bacon and Hollandaise Sauce

Having friends and family over during the holiday season, how about adding a couple fantastic choices with these classic Eggs Benedict and keep your guests happy. 6 slices Canadian Bacon (warmed)

2 ripe Avocados - peeled and sliced

3 English Muffins - split and toasted

Fresh Spinach, wilted

Hollandaise Sauce
3 large egg yolks

1 cup butter

1 fresh lemon, squeezed

1 tablespoon white vinegar

3 tablespoons cold water

1/2 teaspoon paprika spice

1/8 teaspoon fresh ground peppercorns

In saucepan, boil vinegar, 2 tablespoons water and pepper until mixture has reduced to about 2 tablespoons.

Remove from heat and add the remaining 1 tablespoon of water and stir.

Whisk in yolks until smooth, place saucepan back over burner and on very low heat whisking constantly the egg mixture until thickened for about 1 minute.

Whisk in cubed butter a cube at a time, removing saucepan from heat occasionally to cool off the sauce as not to burn. Keep adding butter cubes after each previously added cube has melted, continue whisking until all cubes of butter have melted.

Remove saucepan from heat and whisk in lemon juice and paprika. Set aside.

Place 2 - 3 inches of water in a large skillet with high sides or use a egg poacher. Bring to a boil. Reduce heat and simmer gently.

Break cold eggs one at a time into a custard cup or saucer. Holding the cup close to the surface of the water slip individually into water. Cook, uncovered, until whites are completely set and yolks begin to thicken but not hard (about 4 minutes). If you have an egg poacher that's even easier and better, that's what I like to use.

On each of the english muffins, place Canadian Bacon and wilted Spinach on each muffin half.

With a slotted spoon, lift each egg out of the water and place over Avocados.

Top these fabulously delicious Eggs Benedict with your Homemade Hollandaise Sauce, and serve up these smile-making-eggs and be prepared to hear those Oohs-and-Ahs! Add fresh sliced Avocados for Garnish.
