I like to put the Chocolate Orange Liqueur Whipped Topping in an airtight container and garnish when I arrive, grate some fresh orange rind over the top for that extra touch and more mexican chocolate on the top and I have a pretty hot looking winner for that table and I must say these taste fabulous too!

Vanilla or Chocolate Pie Crust
1 1/2 cups vanilla wafer crumbs (about 42 wafers)

1/4 cup Butter, melted

Chocolate Pudding Filling
2 cakes (~7 oz.) of Mexican chocolate

1/2 cup white sugar

1/2 cup corn starch

3/4 teaspoon table salt

6 egg yolks

3 cups milk

1 cup whipping cream

3 tablespoons butter, softened

2 teaspoons kahlua

In small bowl, combine cookie crumbs and melted butter.

Pour into ungreased 9 inch glass pie plate and press into bottom forming a pie crust. Bake at 350°F. for 10 to 12 minutes or until lightly browned.

Remove from oven and cool completely.

In a double boiler melt mexican chocolate. Because Mexican chocolate has a grainy structure, you will essentially be ‘melting’ it until it’s ready to add to your cream. Keep it simmering next to you, occasionally spreading it with a rubber spatula.

In a large heavy sauce pan, whisk together sugar, cornstarch and salt.

In a large bowl whisk together milk, whipping cream, sugar and egg yolks, whisk mixture together until fully combined, bring milk and egg yolk mixture to a boil over moderate heat, whisking constantly until mixture gets hot.

When milk and egg yolk mixture just begins to thicken and slight whisps of steam come off egg mixture, begin whisking vigorously. In less than a minute it will become a very thick custard, keep whisking to prevent the eggs from curdling.

Add softened butter and kahlua to chocolate that’s been melting and whisk until well combined.

Stream the chocolate slowly into the egg custard mixture and whisk while pouring until well combined. Transfer to a bowl, cover with plastic wrap and chill completely.

Cooking Tip:
If you add the custard mixture too early to pie crust will make it soggy, make sure your custard is completely chilled.

Once cooled, spread chilled custard into pie crust.

Garnish with Chocolate Orange Whipped Cream Topping.

Whipped Cream Orange Chocolate Frosting
1 pint Whipping Cream

1 cup confectioners sugar or powdered sugar

1 teaspoon orange extract

1/2 cup baking cocoa powder

In a large chilled bowl and chilled beaters, pour in whipping cream and beat until soft peaks form.

Mix together icing sugar and baking cocoa powder and add gradually while beating.

Whip until firm peaks form or light and a thick enough consistency to spread as an icing.

To serve, dollop each slice of pie with Chocolate Orange Whipped Cream.

Garnish with almond slices or sugar and cinnamon, if desired.

Enjoy!
