Chocolate Cupcakes
1 1/4 cups cake flour


1 cup white sugar


1/3 cup Cocoa Powder


3/4 teaspoon baking soda


1/4 teaspoon table salt


3/4 cup plus 2 tablespoons buttermilk


1 large egg


1 large egg yolk


1 teaspoon pure vanilla extract


6 tablespoons unsalted butter, softened

Position racks in center of oven.  Heat oven to 350°F.  Line muffin cups with paper liners or grease muffin cups and sprinkle with 2 tablespoons flour; tapping out excess.

Mix together in medium bowl flour, 1 cup white sugar, cocoa powder, baking soda and 1/4 teaspoon salt until combined and set aside.

Combine buttermilk, egg, egg yolk and pure vanilla extract in a glass or bowl and whisk until blended.

In large bowl, combine 6 tablespoons butter with dry ingredients at low speed with electric mixer about 2 minutes. Add buttermilk mixture in three additions, scraping down sides of bowl.

Using muffin tins, spray each with non stick spray or line with baking cups.

Spoon batter into muffin tins. 

Bake cupcakes for 18 to 22 minutes, or until wooden toothpick inserted comes out clean. Cool cupcakes in pans on wire rack for 10 minutes, then remove from pans and cool completely on wire rack.

Makes approximately 18 Chocolate Cupcakes, serve and enjoy these little bites of mouth watering joy!


Mocha Frosting
1 tablespoon instant Italian espresso powder or coffee crystals

2 teaspoons pure vanilla extract

10 ounces Belgian Chocolate, Milk, chopped

1 cup unsalted butter, softened

1 tablespoon light corn syrup

2 cups confectioners sugar or icing sugar



Stir Italian espresso powder and vanilla in small bowl until Italian espresso dissolves.

Stir Belgian chocolate in top of double boiler set over simmering water until melted and smooth, remove top of double boiler, set aside and let cool.

In large mixing bowl, beat butter using electric mixer, until fluffy.

Add Italian espresso mixture and corn syrup, blending well, scraping down sides of bowl occasionally.

Beat in melted belgian chocolate, then powdered sugar in 3 additions.

If frosting is very soft, freeze for about 10 minutes stirring occasionally until firm enough to spread.

Spread Mocha Frosting on each cooled chocolate cupcake.

Top with 3 colored Fresh Strawberries or mini Marshmallows on each cupcake.

Whipped Cream Frosting Recipes:
Ingredients
1 pint whipping cream, well chilled

1 cup sifted icing sugar

1 teaspoon pure vanilla extract

Variations:
Chocolate Whipped Cream
1/2 cup baking cocoa powder, sifted with icing sugar

Strawberry Whipped Cream
1 tablespoon Strawberry Juice

Fresh Sliced or Whole Strawberries for garnish

Coffee Whipped Cream
1 tablespoon instant Italian espresso, dissolved in cream

Lemon Whipped Cream
1/2 teaspoon lemon extract

1 finely grated lemon rind, in place of the vanilla

Orange Whipped Cream
1/2 teaspoon orange extract

1 finely grated orange rind, in place of the vanilla

Nut Whipped Cream
1 teaspoon almond extract, in place of the vanilla

3/4 cup minced nuts, of your choice, folded in

Coconut Whipped Cream
1 teaspoon coconut extract, in place of the vanilla

3/4 cup coconut, flaked

Liqueur
1-2 tablespoons Liqueur, in place of vanilla

Fruit Liqueurs

or Any flavored rum - Pineapple or Malibu (coconut)


Cooking Tip:
For extra Tipsy, pierce Cupcakes and dribble with more of the same type of Liqueur and let sit to soak in.

Directions for any of the Whipped Cream Frosting's:
In a large chilled bowl with chilled beaters, pour in whipping cream and beat until soft peaks form.

Add the icing sugar and vanilla gradually while beating.

Whip until firm peaks form or light and a thick enough consistency to spread as an icing.

Use immediately.
