This Spicy Cheese Dip Chili Con Queso is a Hot Favorite in Dip Recipes! With Refried Beans and a super Salsa Recipe this choice will be a hit. Melted creamy Velveeta Cheese, makes this cheese dip unbelievable! Make your own Baked Lime Tortilla Chips to dig into this delicious dip with and wake up those taste buds with delicious flavors!


I would have to say this is a winner in Dip Recipes for sure! When I make this favorite in Mexican Recipes, there isn't one drop left in the bowl! The kids love this favorite when they want a quick and easy snack, they love digging into this tasty choice! With a Greek Salad, believe it or not they're in heaven.


When friends and family drop by for a visit, I put out this Cheese Dip with the Salsa Recipe, Guacamole dip and with the fresh baked Lime Tortilla Chips we have an afternoon of laughs digging into some good eats. I like to make up a pitcher or two of a favorite Margarita Recipe, everyone tends to lean towards the Strawberry Margarita though!


1/2 cup beer

1 teaspoon ground cumin

1/2 teaspoon dried oregano

1/2 teaspoon garlic powder

2 cups Homemade Refried Beans or 16 oz of pre made canned

1/2 cup chunky Homemade Salsa Recipe or pre made

1 16-ounce package Velveeta Cheese, cut into 1/2-inch pieces

1/4 cup chopped fresh cilantro

In large sauce pan, combine beer, cumin, dried oregano and garlic powder, whisking while bringing to a simmer. .

Add refried beans and salsa, stir until heated through and combined.

Add cubed Velveeta cheese; stir until cheese melts, this takes about 3 - 5 minutes.

Add cilantro and mix all ingredients until well combined.

Transfer to serving bowl and serve warm.

Makes about 4 Cups of Creamy Cheese Chili Con Queso . Serve with the Salsa Recipe and Guacamole Dip for an afternoon of FUN!


Homemade Baked Lime Tortilla Chips
1 package 6 inch tortillas, flour

1 package 6 inch tortillas, sundried tomato

1 package 6 inch tortillas, pesto or spinach

1/2 cup extra virgin Italian Olive Oil

6 teaspoons kosher salt

2 limes, squeezed for juice and pits removed

Preheat oven to 350 F


Cut Tortillas into triangles and place on large baking sheet lined with parchment paper. Brush both sides of tortillas with Oil


Drizzle with lemon juice and sprinkle with salt.


Bake for about 5 - 10 minutes.


Rotate baking sheet and bake for additional 5 minutes to obtain even cooking. Bake until Tortillas start to crisp.


Remove from oven and place in large basket or bowl and serve warm with the Cheese Dip. Great with Salsa, Guacamole and Sour Cream. These are Excellent!


Repeat with remaining Tortillas.


To make Baked Tortilla Chips with Cheese:
1/2 cup Mozzarella Cheese, shredded or Gruyere Cheese

1/2 cup Parmesan Cheese, grated or Romano Cheese or Asiago Cheese

1/4 cup extra virgin Italian Olive Oil

Tortilla Shells (see above)

Cut Tortillas into triangles and place on large baking sheet lined with parchment paper. Brush both sides of tortillas with Oil

Sprinkle with Salt.

Bake for about 5 - 10 minutes.

In small bowl mix together cheese.

Remove from oven sprinkle with cheese and place back in oven to bake additional 5 minutes or until cheese has melted.

Remove from oven and place in large basket or bowl and serve warm with Cheese Dip. Great with Salsa, Guacamole and Sour Cream.

Repeat with remaining Tortillas.
