At our family's table during a Holiday Dinner it's not complete without this favorite in Side Dish Recipes. With these little tasty bites I like to choose the smallest of the bunch as these are more calmer in taste and not as bitter. A tip in cooking hints that I've learned over the years, is to add one tablespoon of sugar into the pot while pre boiling the brussel sprouts, this takes out the bitterness.

1 pound fresh Brussel sprouts, trimmed
1 tablespoon white sugar
2 tablespoons olive oil
3 ounces pancetta, sliced and coarsely chopped
4 fresh garlic cloves, minced
fresh ground black pepper corns
3/4 cup chicken broth
Prepare and clean by trimming of ends and remove outer leaves, rinse in cold water.
Partially cook in a large pot of boiling water with 1 tablespoon of sugar, about 4 minutes. Drain.
Meanwhile, heat the extra virgin italian olive oil in a heavy large frying pan over medium heat.
Add the pancetta and saute until beginning to crisp, about 3 minutes.
Add the garlic and saute until pale golden and pancetta is crispy, about 2 minutes.
Add pre cooked Sprouts to the fresh garlic and pancetta and saute until heated through and beginning to brown, about 5 minutes.
Season with kosher salt and fresh ground pepper corns, to taste.
Add broth and simmer until broth reduces just enough to coat , about 3 minutes.
Pour into serving dish, sprinkle with freshly grated Italian Cheese, the Parmigiano Regiano is my favorite to use and a sprinkle of freshly chopped baby dill weed.
Makes 6 - 8 servings. Enjoy!
