Bruschetta, Fresh Italian Bread Crostini with Tomato and Sweet Basil

This favorite in Italian Food make excellent Finger Foods... Fresh chopped tomatoes, sweet basil, garlic and olive oil piled high on fresh Italian Bread Crostini, for the perfect appetizer for Burst-in-Your Mouth Flavor!









Fresh Tomatoes and Sweet Basil are the stars in this Bruschetta, with hot out of the oven melt-in-your-mouth Italian Bread Crostini, this flavorful appetizer takes finger foods to another level!




Italian Food... YUM, this recipe is an all time popular pick in our big Italian Family for sure, we've been munching this favorite at our family gatherings for many years, actually we use any excuse to make these Bruschetta and makes a great starter to any meal for a favorite in finger foods. I like to make these delicious tasty bite size treats for one excellent starter choice.


Anytime is a great time to try these Bruschetta, great for an afternoon of chatting with the girls or as a treat in party snacks for family night with a movie. A great start in party food for a barbeque party or dinner party with a pick in BBQ Recipes, anytime is a great excuse to try out these Bruschetta, a versatile favorite in Appetizer Recipes for sure!


Bruschetta
10 medium roma tomatoes, finely diced


1 cup basil leaves

1 clove of fresh garlic, minced fine


1/2 extra virgin Italian olive oil


1/2 teaspoon kosher salt

1/2 teaspoon fresh ground pepper corns

1 loaf of Italian bread, (ciabatta bread or baguette), cut into 1/2 inch slices


Prepare tomatoes, I like the roma tomatoes as they have less seeds and give a must better flavor than your regular tomatoes.



In a medium mixing bowl, combine finely diced roma tomatoes, sweet basil, fresh garlic, Italian olive oil, salt and pepper, mixing gently to combine all ingredients well. Taste and add more seasonings spices if necessary. Set aside in refrigerator.

Crostini - Ciabatta Bread

1 loaf of Italian bread, (ciabatta bread or olive bread), cut into 1/2 inch slices on diagonal

2 tablespoons extra virgin Italian olive oil

1 large clove of fresh garlic, peeled and cut in half

parmigiano reggiano (Parmesan cheese), freshly grated


Brush cut Italian bread lightly on both sides with extra virgin Italian Olive Oil.

On large baking sheet, place prepared and sliced ciabatta bread.

Place cookie sheet on middle rack in a preheated 425 F oven. Bake for about 5 - 10 minutes, turning half way through. Or until lightly golden brown. Watch carefully as they can burn quickly, I've had mine burn on me when I haven't been paying attention!

While your Crostini are still hot, rub gently with your fresh garlic clove, sprinkle lightly with Parmesan Cheese on each if desired.

Remove tomato mixture from refrigerator, Using spoon, spread tomato mixture on top on your Crostini and place on serving dish or platter and serve warm. Enjoy!

Makes about 15 -20 appetizers, depending on how thick you slice your bread.

3 ounces Feta cheese, crumbled

2 ounces Philadelphia cream cheese

1/4 cup Parmesan Cheese, fresh grated

2 teaspoon lemon juice

1 teaspoon fresh oregano

1 cup roasted red sweet peppers, (pre made in jar) drained

1/4 cup Italian green olives, chopped and pitted (Kalamata Olives work well too)

1/2 teaspoon extra virgin Italian olive oil

In medium mixing bowl, stir crumbled feta cheese, cream cheese, lemon juice and fresh oregano mixing well.

Drain and cut red sweet peppers and add to cheese mixture, stirring well.

Add in chopped olives and Italian olive oil, mix well. Set aside in refrigerator.

Follow Directions above to make Crostini.

Spread each Crostini with olive pepper mixture using spoon. Sprinkle with fresh grated parmigiano reggiano.

Return slices to ungreased baking sheet, bake in a 425 F oven about 3 minutes or until the toppings are heated through.
Makes about 15 - 20 appetizers, depending on how thick you slice your bread. One excellent pick in finger food for your next Appetizer Party!
