8 large eggs

1/4 cup green onions, chopped

2 cloves of fresh garlic, minced

1/2 teaspoon Italian seasoning

1/2 teaspoon table salt

1/8 teaspoon fresh ground pepper corns

3 cups frozen shredded hash brown potatoes

1/2 cup Gruyere Cheese, shredded or Swiss Cheese

1/2 cup Mozzarella Cheese, shredded

1/2 cup diced fully cooked baked ham

1/2 cup chopped green pepper

Beat eggs until light and fluffy in large bowl.

Add onions or onion powder, thyme, salt and pepper stirring in well.

Stir in potatoes, cheese, ham and green pepper.

Pour into greased 9 inch pie plate.

Bake at 350 F 40 - 45 minutes or until knife inserted in center comes out clean.

Cooking Tip:
A bowl of fresh Tomato Wedges on the side makes a great add on to this dish.If serving individually on plates, garnish plates with tomato wedges and sprig of parsley.
