I like to use seven different types of beans, the variety give this a really excellent flavor mix, and when baked slowly, the flavors blend together for a mouth watering tasty favorite. Served with one of your favorites in Main Dish Recipes or with one of the BBQ Recipes this easy choice will please the pickiest of palates, the preparation is easy, it's the waiting to dig into this side dish that's tough part!

1 pound of Bacon or pancetta, chorizo or cooked Italian Sausage

1 yellow onion, jumbo size, diced or chopped

1 cup white vinegar

1 cup brown sugar

1 tablespoon dried mustard

1 can garbanzo beans or chick peas, 8 oz size - drained

1 can yellow beans, cut or whole, 8 oz size - drained

1 can green beans, cut, 8 oz size - drained

1 can deep browned baked beans, 16 oz size

1 can broad beans, 8 oz size - drained

1 can kidney beans, 8 oz size - drained

1 can lima beans, 8 oz size - drained


Dice Bacon and cook slightly in non stick skillet. If there is little or no fat in pan add 1 tablespoon of olive oil to get that caramelized look.

Add onion and cook over medium heat until onion and bacon is tender and has that caramelized crunchie look.

Drain all the beans of liquid except for the deep browned baked beans.

In a very large casserole dish, add beans and bacon mixture stirring well.

Add vinegar, brown sugar and dried mustard to the bean mixture stirring until well combined.

Bake in preheated oven at 350 F for about 1 1/2 - 2 hours or until desired consistency is reached and beans and sauce is a nice dark rich color.

Makes 10 - 12 servings and is absolutely the best. Enjoy!
